Almond Cake with Lingonberry Sauce was the featured dessert for my Swedish Affair book club event. A tender moist cake which gets its intense almond flavoring from almond paste, a most ingenious baking ingredient! The lingonberry sauce provides a great sweetly tart contrast. A dollop of freshly whipped cream provides the finishing touch to this delicious dessert.
This Beet Salad was featured in my Swedish Affair post. A delightfully healthy spin on a traditional Swedish beet salad, with pickled baby beets, oranges, spiced pecans and a honey, ginger, balsamic vinaigrette. A wonderful combination of flavors to wake up those Scandinavian taste buds!
A book written by a Swedish author was the inspiration for this Book Club menu. Of course there had to be Swedish meatballs! This smorgasbord also included a Salmon Pate appetizer, my own version of a beet salad, and for dessert – a traditional Almond Cake served with Lingonberry Sauce & Whipped Cream. Scandinavian food never tasted so good!
