Apple, Parmesan & Pecan Salad with Balsamic Vinaigrette

Apple SaladThis simple salad is a great combination of Fall flavors that combines crisp apple, salty parmesan and toasty pecans. I used a tangerine balsamic vinegar to make the vinaigrette, but you can use any balsamic you prefer.

Apple, Parmesan & Pecan Salad with Balsamic Vinaigrette

Ingredients

    Salad
  • 6 - 8 cups mixed greens
  • 1/2 cup diced unpeeled apple (I prefer Honeycrisp, but use what you like best)
  • 1/3 cup toasted pecans, broken in large pieces
  • 1/3 cup shaved parmesan cheese
    Dressing
  • 1/4 cup tangerine balsamic vinegar (or whatever balsamic you prefer)
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 3 tablespoons water
  • pinch salt & a few grinds of fresh black pepper

Instructions

    Salad
  • Toss greens with dressing. Then top the salad with the apples, parmesan cheese and pecans.
    Dressing
  • Combine all ingredients in a jar with tight fitting lid and shake to combine.
