Broccoli, Bacon & Cheese Salad

Broccolic Bacon & Cheese SaladThis is a great recipe for a picnic or a mid-winter holiday gathering, because the availability and quality of broccoli is consistent year-round.  This salad provides a nice combination of flavors which lures in people that typically don’t opt for the veggies. Of course there is the bacon that boosts the calories a tad, but if you can get people to eat nutrient-packed broccoli, I think it’s worth it!

Broccoli, Bacon & Cheese Salad

Serving Size: Serves 4-6


  • 3 cups broccoli, washed, drained & cut into bite-sized florets
  • 2 ounces (1/2 cup) shredded cheddar cheese (I use sharp cheddar, but use what you like)
  • 1/3 cup raisins
  • 1/4 cup chopped red onion
  • 8 slices bacon, cooked and crumbled
  • 1/3 cup shelled sunflower seeds (you can use roasted with no salt or roasted & salted)
  • 1/2 cup mayo (I prefer Hellmann's light)
  • 2 tablespoons sugar
  • 2 teaspoons lemon juice


  • In a large bowl combine broccoli, cheese, raisins, onion, bacon and sunflower seeds.
  • In a small bowl combine mayo, sugar and lemon juice. Mix dressing well and allow to chill for an hour or so.
  • Pour dressing over salad and toss well to coat. You can serve immediately or refrigerate for several hours.


You can make this salad a day ahead. I usually make make 2.5 times the recipe when I serve this salad to a crowd.
