Heirloom Carrot & Potato Hash


You can use leftover roasted heirloom carrots to create this hash. Just fry, scramble or poach up some eggs and your all set with a delicious breakfast that includes some good-for-you carrots as well.

Heirloom Carrot & Potato Hash


  • 1 bunch roasted heirloom carrots
  • 1 cup chopped roasted potatoes
  • 1/2 cup chopped pre-cooked sausage or corn beef
  • cooking spray
  • fresh snipped chives
  • eggs


  • Chop roasted carrots into larger chunks (approximately 1 ")
  • Coat nonstick frying pan with cooking spray. Saute' chopped precooked sausage or corned beef for several minutes and the add carrots and potatoes and continue to cook until warn.
  • While meat and veggies are being cooked, prepare eggs to your preference.
  • Top hash with snipped chives and serve with eggs.
