True confession. After creating these 3 new categories:
I realized that my Easy Meals section needed work! There had been many special occasions to cook for when I started up ItsThyme2cook – Gourmet Club, Book Club, Fall Tea, the holidays, etc… which lead to an abundance of recipes for entertaining. I am also a person that likes to balance things out between these special occasions, by eating healthy. So I included those recipes in a healthy eating section.
Recently I started cooking more weekday meals which are easier to prepare and provide some economical leftovers for lunch. That trend, coupled with the realization that many non-retired cooks have limited time and energy, gave birth to the Easy Meals idea. I believe weekday cooks are still looking for a little inspiration, however, because its hard to come up with new ideas on a daily basis! So, bookmark each of the pages above as a resource, and stay tuned for additional recipes, especially more Easy Meals, in the future.
