Super Easy BBQ Quesadillas

With less than a week until Super Bowl Sunday, it’s time to tackle the most important detail – THE FOOD!  While it’s fun to try new appetizers, most people don’t want to spend hours in the kitchen pulling together their game day buffet. If that’s how you feel, these Super Easy BBQ Quesadillas are for you! Just pan-brown tortillas filled with ready-made BBQ pulled pork and queso fresco cheese. Then drizzle with balsamic syrup (very easy to make) and top with fruit salsa (which you can make or buy.) Very easy, yet a cut above a frozen pizza or cocktail weenies.

Tony Roma Pulled Pork

I’ve tried a few different BBQ pulled pork products over the years, some tasting better than others. For this recipe, I tried Tony Roma’s Kansas City Pulled Pork with Sweet Hickory BBQ Sauce. It was very good. In fact, Mike and I both thought it was the best option we’ve found so far. I spotted this product at a grocery store on Maui, but I understand that Walmart carries it as well. 

Fruit Salsa Options

This recipe, which originates from the At Home with Kowalski’s magazine, called for fresh mango salsa from their deli. A jar of peach salsa would be an another easy-to-find option. I decided to whip up a fresh papaya salsa, which melded very nicely with the rest of the quesadilla flavors. This salsa can also be modified to use fresh mango or pineapple, or even canned pineapple. 

In true transparency – having this recipe taste as good as it did brightened my culinary psyche. A pasta dish I had planned to blog a few days ago turned out to be a bust. But if you experiment frequently, you occasionally have a dud. No worries on this recipe however. It’s as close to fool-proof as you can get!

Super Easy BBQ Quesadillas

Serving Size: Serves 6


  • 1 lb. purchased BBQ pulled pork (I used Tony Roma's)
  • 6 oz. queso fresco cheese
  • 6 (6") flour tortillas
  • olive oil or olive oil cooking spray (for browning tortillas)
  • chopped cilantro, for garnish (or basil or parsley)
    Balsamic Syrup
  • 1/4 c. balsamic vinegar
    Fruit Salsa
  • 2 c. fresh papaya cut into medium dice (or fresh mango, or fresh or canned pineapple)
  • 1 jalapeno seeded and minced
  • 1/4 c. red onion, chopped (rinsed in hot water for a few seconds if too strong)
  • 1 tablespoon lime juice
  • 1-2 tsp. hot sauce (depending on the heat level of your jalapeno)
  • 2 tbsp. chopped cilantro (or use basil or parsley)


  • Cook pulled pork according to package instructions.
  • Lightly coat a tortilla with cooking spray or brush lightly with olive oil. Place in large nonstick skillet. Spoon 1/4 c. pulled pork onto half of tortilla. Crumble 2 tbsp. queso fresco over meat. Fold tortilla in half and press down gently. Cook over medium heat for 2-4 minutes per side, or until lightly browned and cheese is melted. Remove from pan and let cool for 1 minute before cutting into wedges. Repeat with remaining tortillas. Drizzle wedges with balsamic syrup and top with fruit salsa and chopped cilantro (or desired herb.)
    Balsamic Syrup
  • Cook balsamic vinegar in a small heavy sauce pan over medium heat until reduced to a syrupy consistency, about 5-10 minutes.

  • Combine diced fruit, jalapeno (start with 1-2 tsp. then taste before adding more,) onion, lime juice and cilantro (or desired herb.) Taste to see if heat from jalapeno is to your liking. Add desired amount of hot sauce, if you want more heat. If time allows, make this a few hours in advance, to let flavors blend.
