Turkey a la King – Easy Inspiration

It’s important to mention that Easy Meals, are typically familiar dishes that you’ve probably enjoyed a number of times before. In fact, you may have a variation of this recipe already. However, if you are like me, your mind can be a blank slate when you try to select the meal plan for the week. One of the great things about cookbooks and online recipes, is that they can provide a spark of inspiration. Usually, we are not perusing for exotic and untried. Rather, we are looking for easy, proven and “hey, that looks like something we’d all like!”

Easy & Adaptable Recipe

I used a Jennie O Oven Roasted Turkey Breast for this recipe. It’s very moist turkey meat and a great convenience item.  You can find this product typically with the other turkey products in the meat department at most larger grocery stores. I purchased a turkey breast which was about 1 1/4 pounds and had enough left over to make a tasty turkey salad as well.

When I’ve made this recipe in the past for my grandsons, I substituted thinly sliced carrots for the mushrooms, because they aren’t big mushroom fans. I also skipped the red pepper and doubled up on the celery. In fact, the original recipe calls for green pepper, but I substitute red pepper, because that’s what I prefer. As you can see, this is a very flexible recipe which can be adapted to your veggie preferences.

My daughter recently mentioned that she had been expanding the boys horizons with a variety of different recipes. With that in mind, I may have to give the exotic mushroom/pepper version a try the next time I serve this up for them. We’ll make foodies out of those grandsons before you know it!

Serving Size: Serves 4

Turkey a la King


  • 2 c. sliced mushrooms
  • 1 stalk celery, chopped
  • 1/4 c. chopped onion
  • 1/4 c. red or green pepper
  • 2 tbsp butter
  • 1/4 c. flour
  • 1 c. reduced sodium chicken broth (or regular)
  • 1 c. milk (I use whole, but use what you prefer)
  • 2 c. cubed cooked turkey breast
  • 1 c. frozen peas
  • 1/4 tsp salt
  • 2 c. cooked rice (I use Uncle Ben's Ready Rice which microwaves in 90 seconds)
  • snipped chopped chives, optional


  • In a large nonstick pan, melt butter and saute celery for 3 minutes. Add onion and pepper and saute another 2 minutes. Add mushrooms and saute until all vegetables are tender. Note - I sometimes cover the pan for part of the sauteing step to make sure all vegetables are cooked to a tender stage.
  • Place flour in small bowl and slowly whisk chicken broth into flour in a steady stream, until smooth. Stir broth into vegetable mixture, then stir in milk as well. Bring to a boil. Cook for 2 minutes or until thickened.
  • Add the turkey, peas and salt; heat through. Note - I recommend covering the pan for a few minutes with the burner on medium low for this step. Serve with rice and top with chives, if desired.
