Eat Healthy

This is a collection of lighter fare, with recipes focusing on leaner proteins and more complex carbohydrates, for a healthier balance. One of my main tenants about healthy eating is that fat is not the enemy (don’t worry, I don’t go overboard with fat and I do lean towards healthier fats.) The real issue is, our diets in general have way too many empty carbs. I try to avoid that but mixing in legumes, whole grains and lots of veggies.
