Easy Sheet Pan Sausage and Veggies

Easy Sheet Pan Sausage and Veggies is my new favorite, easy-peasy versatile meal!

Sometimes, I discover a recipe that seems too simple to share. But as it turns out, that’s what people love! This meal is on the table in 40 minutes. It’s also very healthy with a colorful medley of sweet potatoes, red pepper, and green beans paired with sliced smoked sausage. Instead of a long list of seasoning, this recipe uses whatever spice blend you prefer or have on hand. I told you it was easy.

Seasoning Options

You can use a variety of seasoning blends based on what you’re hankering for and what’s in the pantry. I used Mrs. Dash Fiesta Lime Seasoning Blend, which I thought was delicious. It had a Southwestern vibe with chili pepper, cumin, cayenne, lime, and other yummy spices.

Other Options:

  • Taco seasoning
  • Cajun seasoning
  • Italian seasoning
  • Your own custom blend!

Garlic – I tend to go easy on garlic or omit it altogether based on personal preference. So feel free to amp up or dial back the fresh garlic in this recipe based on your own taste buds and the spice blend you select.

Tips & Tweaks

Sausage – The original recipe suggested smoked turkey or chicken sausage in keeping with the healthy theme. I used smoked venison sausage, which I had on hand. Any of these options or other flavored smoked sausage would work. But be sure to select a smoked sausage because it is already cooked.

Veggies – The original recipe used broccoli vs. green beans. I actually love roasted broccoli, but I don’t like the odiferous after-effect. So, I opted for green beans, which are my favorite green vegetable. I also take advantage of the green beans in the bag, which are clean and ready to heat and eat. But do give broccoli florets a go if you prefer. You can also use different colored bell peppers, halved Brussels sprouts, onion, zucchini, halved baby carrots, or other options. Just keep in mind the 20-25 minute roast time to ensure whatever you select doesn’t get over or undercooked.

Sides – You can pair this dish with light sides like a green salad and some toasted rustic bread. Or, for heartier appetites, you can opt for mac & cheese or even throw everything into a pita.

An easy, healthy and colorful medley of roasted sausage and veggies seasoned with your favorite spice blend

Ingredients

  • Smoked Sausage cut into 1-inch pieces (12-16 ounces)
  • 2 cups sweet potato peeled and cut into 1/2” cubes
  • 2 cups green beans cut into 2-inch pieces
  • 1 cup chopped red pepper
  • 2 cloves garlic minced optional
  • 2 tablespoons olive oil
  • 1 tablespoon spice blend Mrs. Dash, Cajun, Taco, Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  • Pre-heat oven to 400F.
  • Place the sausage, veggies, and minced garlic on a large baking sheet. Drizzle with olive oil and toss to coat.
  • Sprinkle with your favorite spice blend and salt and pepper. Toss until everything is well-coated with olive oil and spices.
  • Bake for 20-25 minutes, tossing halfway through. Enjoy!
