Shrimp Burgers with Cajun Tots
Wondering what to make for dinner tonight? How about Shrimp Burgers with Cajun Tots, another great easy meal option from ItsThyme2Cook. This meal comes together very quickly, especially if you purchase the Cajun spice mix and the sriracha mayo. I had all the ingredients on hand, so I made my own Cajun Spice Mix. As I mentioned in my BLT Roll-up post, I get excited about trying a new cooking technique for the first time. With this recipe, it was chopping up raw shrimp and forming it into a patty. I was a little skeptical of these burgers initially, because their only real flavoring was green onion. But after pan browning, they are given a good squeeze of lime and topped with Sriracha mayo. Then you add the spicy Cajun Tots and find yourself saying “hello taste buds, there’s plenty of flavor!”
Burger It Up!
We enjoyed these burgers without the buns, but I love the idea of serving them on Challah rolls (rich, eggy bread), slathered with Sriracha mayo. The traditional toppings of lettuce and tomato would also be great additions. Since we had just treated ourselves to delicious hamburgers at Peppers & Fries the day before, we opted for a lighter version for this recipe the next day. Either way, you can’t go wrong with this easy, flavorful meal.
Shrimp Burgers with Cajun Tots
Ingredients
- cooking spray I recommend olive oil cooking spray
- 1 lb. frozen potato tots or puffs
- 2 tsp. no-salt-added Cajun seasoning see link in post for making your own
- 1 lb. large raw peeled, deveined shrimp, coarsely chopped
- 1 large egg white
- 2 green onion finely sliced or chopped green parts only
- 2 tbsp. panko bread crumbs be sure to get Panko, not just dry bread crumb
- 1/4 tsp ground black pepper
- 1/4 tsp kosher salt
- 1 1/2 tbsp.olive oil or olive oil cooking spray
- 1 lime halved
- Sriracha Mayo purchased or a few tsp. of Sriracha (or to taste) stirred into 1/3 c. mayo
- 4 Challah rolls or bun of choice, lettuce & tomato, optional
Instructions
- Heat oven to 425 degrees. Spray the baking sheet with cooking spray. Scatter the tots on the sheet and then coat with additional spray. Toss with Cajun seasoning. Bake until golden brown and crisp, turning halfway through, 25-30 minutes.
- Meanwhile in a food processor, pulse together the shrimp, egg white, green onion, panko, salt and pepper just to combine (there should still be some chunks of shrimp.)
- Heat the oil or additional cooking spray in a large nonstick skillet over medium heat. Shape the shrimp mixture into 4 patties that are 3/4″ thick and cook until golden brown and opaque throughout, 3 to 4 minutes per side. Remove from skillet and squeeze lime halves over the burgers.
- If desired, spread the buns with Sriracha mayo and then top with burgers, lettuce and tomato. Or serve burgers without buns, topped with sriracha mayo.

Cathy: I made the shrimp burgers last night and we so enjoyed them. I served mine with a small salad of tomatoes and lettuce and some zucchini boats stuffed with red and golden beets, onions, basil, and parmesan cheese.
