Chicken Fiesta Bowls are another successful Kowlaski’s recipe that falls into the easy meal category. First of all, you start with protein-rich brown rice, black beans, cheese and chicken. Then you add fresh spinach for a nice kick of color and important vitamins. Finally, you top with salsa, chives and pickled jalapenos to amp up the flavor.

Flavor Flexibility

Speaking of flavor, there’s a great deal of flexibility with this recipe. Initially, I thought there was too much flexibility. By that I mean, there was more emphasis on optional ingredients than on specific quantities and instructions. But don’t worry! By experimenting a little, I managed to create a winning combination that you can enjoy as well. However, don’t feel like you need to stick to the script. Ad lib a little with some of these ideas:

  • add steamed fresh or frozen corn
  • substitute queso fresco for the shredded cheddar
  • top with chopped avocado or guacamole
  • add a dollop of sour cream

Ingredients

  • 2 c. cooked brown rice I used 2 packages of Uncle Ben’s Brown Ready Rice which cooks in 90 seconds in the microwave!
  • 2 handfuls of torn baby spinach
  • 1/2 c. drained and rinsed canned black beans
  • 1 lb shredded or chopped rotisserie chicken or sliced grilled chicken
  • shredded cheddar or Mexican 4 cheese blend to taste
  • medium salsa to taste (or select whatever heat level you prefer)
  • sliced green onion or snipped chives
  • sliced pickled jalapenos optional
  • chopped cilantro optional

Instructions

  • Cook brown rice according to package instructions.
  • Combine in microwave safe bowl; brown rice, spinach, black beans and chicken, mixing to combine. Microwave, covered, for a minute or two until spinach wilts and all ingredients are warm, mixing again after heating.
  • Divide mixture between 4 microwave safe individual bowls. Top each with cheese and salsa. Cover and microwave just until cheese is melted, about another 30 seconds to 1 minute per bowl. Top with green onion, pickled jalapenos and chopped cilantro, if desired.
  • Note – microwave wattage and cook times vary. Start by using less time, check food, and then continue heating, as required, to insure everything is warm.

      They are! I think your whole family would like them. It is also very easy customize the heat of the salsa and the toppings based on what eveyone prefers.
