It’s that time of the year again. Time for holiday parties, pot luck-style! My Bible Study gals gathered for our annual holiday party, all bearing yummy contributions to share. Mine, was this Asian Salad. It’s a light toss of mixed greens, Mandarin oranges, red pepper, avocado and toasted almonds, all dressed with a flavorful sesame ginger vinaigrette. Throw in some chicken or shrimp and you would have a great entree salad.

A Pot Luck of Recipes!

There were a number of repeat recipes we enjoyed at this year’s pot luck that were worth sharing again. Enjoy these recipes at your next holiday party or any gathering throughout the year!

Note – You can make up a batch or two of this punch recipe without the champagne and orange liquor. Have guests mix a glass half full of punch and top off with either champagne and a splash of orange liquor, or with ginger ale for a non-alcoholic version. It’s delicious either way!

We also decided to have a cookie exchange this year. There’s nothing like a wonderful array of baked goods as a parting gift!  It was a lovely time, as usual. Of course we ate too much, as usual. But the upside is, it spawned this recipe for Asian Salad and the links to these other perennial favorites. Enjoy!

Asian Salad

Asian Salad with Sesame Ginger Vinaigrette

Asian Salad with Sesame Ginger Vinaigrette is a light and flavorful toss of mixed greens, Mandarin oranges, red pepper and toasted almonds.

Ingredients

Sesame Ginger Vinaigrette

  • 2 cloves minced garlic
  • 1 tbsp. fresh ginger peeled and finely minced or grated
  • 2 tbsp. sesame oil
  • 3 tbsp. soy sauce
  • 2 tbsp. rice vinegar
  • 1 tbsp. honey
  • 1/4 c. canola oil

Salad

  • 11 oz. container mixed greens
  • 15 oz. can Mandarin oranges drained
  • 2 avocados sliced or cut into chunks
  • 1 red pepper cut into thin strips
  • 1/3 c. toasted sliced almonds

Instructions

Sesame Ginger Vinaigrette

  • Put all ingredients in a jar with a tight fitting lid and shake to combine, until well blended. Store dressing in refrigerator if made in advance, Allow to sit at room temperature for at least 30 minutes and shake well before using.

Salad

  • Toss mixed greens with enough dressing to coat. Arrange oranges, avocado and red pepper on top of greens. Drizzle with a little additional dressing and top with almonds. Enjoy!
