This Bacon and Veggie Frittata is easy to prep, a real crowd-pleaser, and packed with flavorful goodies.
You gotta love an egg dish that’s loaded with smokey bacon and colorful veggies. Thanks to the spinach, red pepper, and red onion there’s plenty of reason to feel healthy. It’s also a dairy free frittata based on the combination of a few different recipes. I’m really happy I included the Italian seasoning from one of the recipes. This addition boosted the flavor of the eggs and the cooked vegetables. Of course, the sizable quantity of bacon didn’t hurt either. It’s true, everything is better with bacon!

Dairy-Free Egg Dish
My bible study group was gathering for a brunch and I volunteered to make an egg dish. That’s when I discovered a dairy-free option was needed for one member. Never one to shy away from a culinary challenge, I started researching options. Psst.. can I make a humorous confession? Initially, I thought eggs were considered a dairy item, so I planned to make something separate for the dairy-free person. That’s when my husband pointed out that eggs do not come from cows. Duh!?
So, the challenge was to find a recipe without regular milk or cheese. Fortunately there are recipes that use coconut milk and almond milk, which are both easy to find. I selected coconut milk, but either will work. Be sure to use the unsweetened version of coconut or almond milk. Also, the full fat version of coconut milk is recommended, not the light version.
I confess, I was skeptical of an egg dish without cheese, both for the flavor and the richness factor. But the bacon supplied plenty of richness and the veggies and Italian seasoning, plenty of flavor.
Make Ahead Tips
To minimize the prep for the morning of the brunch, I prepared the veggies, bacon and egg mixture a day in advance. First I sauted the veggies and then separately cooked and chopped the bacon. I also whisked together the egg, milk, and seasonings. Then I stored each of these components individually in covered containers in the frig. The morning of the bunch, I assembled and baked the frittata. Easy peasy.

Bacon and Veggie Frittata
Ingredients
- 12 oz. cooked, chopped bacon
Veggie Mixture
- 1 tablespoon olive oil
- ½ medium red onion, chopped
- 1 large red bell pepper, chopped
- ¼ teaspoon Kosher salt
- 1 clove garlic, minced
- 1 5 ounce package fresh baby spinach leaves, chopped coarsely
Egg Mixture
- 12 large eggs
- ⅓ cup unsweetened coconut milk (full fat, not light) or unsweetened plain almond milk
- ½ teaspoon Kosher salt
- ¼ teaspoon pepper
- 1 tbsp. Italian seasoning
Instructions
- Preheat the oven to 350ºF. Spray 9×13 inch baking dish with nonstick spray and set aside.
Veggie Mixture
- Using a nonstick skillet, saute onion, bell pepper, and 1/4 tsp. salt in olive oil for about 5 to 7 minutes, or until tender. Stir in the garlic and cook for 30 seconds.
- Add the spinach in several additions, cooking until wilted. Set aside.
Egg Mixture
- In a medium-large bowl, whisk together the eggs, milk, Italian seasoning, 1/2 tsp. salt and pepper.
- Arrange the veggie mixture and bacon in a baking dish, distributing evenly. (reserve a tbsp or two of bacon for garnish, if desired.) Pour the egg mixture evenly over the bacon and veggies.
- Bake for about 25 to 30 minute. The frittata should appear puffed and the eggs should be set.
- Remove from the oven cool for about 10 minutes. It helps to loosen edges with a knife before cutting and serving. Sprinkle with reserved bacon, if desired.
