Serve up these flavor popping Blackened Shrimp Cucumber bites while hosting a virtual cocktail party!
Plump shrimp coated with Creole seasoning are quickly sauteed and nestled into a satisfying avocado mash slathered onto crisp (low carb) cucumber slices and drizzled with kicky remoulade sauce. Seriously, your taste buds will thank me when you bite into one of these delicious appetizers.
It seems like a lifetime ago when I made these for a dinner party for my brother and sister-in-law. Even though it was only a month ago, that actually is a lifetime in COVID-19 terms. But after seeing a steady stream of family friendly comfort food recipes, I decided the world (and our taste buds) needed this recipe.
Virtual Cocktail Party
If you’ve never hosted a virtual cocktail party, it’s actually quite simple. Pour yourself a glass of your favorite beverage, grab some appetizers and connect with friends or family in the virtual world. I am loving Zoom, a free video conferencing app, which is a cinch to use. So far, I’ve used Zoom to connect with my bible study group and have my first cocktail party planned with friends this weekend.
Blackened Shrimp Cucumber Bite Tips
- Purchase a Cajun seasoning blend to keep things super easy or you can make your own Cajun Seasoning.
- You can also substitute purchased guacamole for the avocado mash. But the avocado mash is quite easy to whip up and I prefer its thicker consistency.
- The Remoulade has a real kick so a little goes a long way! This delicious spicy mayo-based sauce would also be great on a seafood poorboy sandwich, or with crab cakes.
- Use toasted baguette slices instead of cucumbers for a heartier appetizer.

Blackened Shrimp Cucumber Bites
Ingredients
Shrimp Cucumber Bites
- 1 tablespoon oil
- 1 tablespoon creole seasoning
- 1 pound shrimp peeled and deviened (I used 16-20 shrimp per lb size)
- 1 cucumber sliced
- 1/4 cup remoulade sauce optional
- chopped parsley, optional, for garnish
Avocado Mash
- 1 large avocado (or 2 small) mashed
- 1 green onion thinly sliced or chopped
- 2 tablespoons cilantro and/or parsley chopped
- 1 tablespoon lemon juice
- salt and cayenne to taste
Remoulade Sauce
- 1/4 cup mayonnaise
- 1 tablespoon creole mustard
- 1 tablespoon ketchup
- 1 teaspoon horseradish
- 1 small clove garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon capers, chopped
- 1 green onion chopped
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
Instructions
Shrimp Avocado Bites
- Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
- Top cucumber slices with avocado mash and shrimp then drizzle with remoulade sauce. Sprinkle with chopped parsley if desired.
Avocado Mash
- Mix everything and enjoy!
Remoulade Sauce
- Blend everything in a food processor until smooth.
