BLT Avocado & Corn Salad

A Salad that Celebrates Summer

BLT Avocado & Corn salad embraces everything that’s wonderful about summer. The sweetness of cherry tomatoes and fresh sweet corn. Both which pair perfectly with the fresh basil in the Creamy Lemon Basil Dressing. Then there’s the smokey, salty bacon and the richness of avocado which makes just about any salad better.

Endless Possibilities

The recipe that inspired me had a few differences. It used butter lettuce and arugula vs. romaine and a simple lime juice and olive oil dressing. That version sounds light and delicious as well. When I decided to go with a Creamy Lemon Basil Dressing, I knew a heartier lettuce like romaine would work best. The original salad also included feta, which I love. While feta sounds great with the lime juice dressing, I decided against using it with the Creamy Lemon Basil dressing. Of course, you can create whatever combo sounds best to you, including these ideas:

Make it a Main Course

Pack on Some Protein – Add sauteed chicken or shrimp or grilled sliced steak to make this salad a main course meal.

Say Cheese – add feta, goat cheese crumbles, shredded Parmesan or crumbled blue cheese.

Sweet Corn Tip

I highly recommend using fresh sweet corn. Buy it as close as possible to the time when you plan to use it. Shuck it and slice the kernels from the cobs shortly before making the salad to ensure peak sweetness. To make the process easier, slice the corn standing tip up in a shallow bowl to catch the kernels. If you’ve never used raw corn, it might seem unorthodox. But I assure you, it’s the perfect option for a fresh salad.

Meeting Rudy

I wanted to “dress up” an easy lunch of take & bake pizzas for a recent lunch date with my daughter and grandsons. That’s why I geve this BLT Avocado & Corn Salad a spin. So glad I did! I also whipped up a batch of my Deluxe Scotcheroos which received an enthusiastic thumb’s up from the grandsons. The real highlight however, was meeting my daughter’s new French bull dog puppy, Rudy. Isn’t he just the cutest thing you ever saw?!

BLT Avocado & Corn Salad

Ingredients

Salad

  • 8 cups chopped romaine lettuce
  • 1 pint cherry tomatoes halved
  • 8 slices thick-cut bacon fried and crumbled
  • 1 1/2 cups sweet corn
  • 2 avocados chopped

Creamy Lemon Basil Dressing

  • 1/2 cup lite mayo
  • 2 tbsp. fresh lemon juice
  • 1 tsp. lemon zest
  • 2 tbsp. chopped fresh basil
  • 1 tsp. sugar
  • 4 tbsp. whole milk or half & half
  • kosher salt & freshly ground black pepper to taste

Instructions

Creamy Lemon Basil Dressing

  • Whisk together mayo, lemon juice, zest, basil and sugar. Slowly whisk in milk (dressing needs to be on the thinner side to coat salad ingredients.) Season to taste with salt & pepper

Salad

  • In a large bowl, combine lettuce, tomatoes, bacon, corn and avocado. Toss with just enough dressing to coat lightly. Plate salad and then drizzle with remaining dressing. Enjoy!
