BLT Roll-ups – For Bacon Lovers!
It all started when Mike and I spotted these BLT Roll-Ups on Facebook. I was intrigued by the concept of weaving bacon, plus the chance to try a new cooking technique. Now all I needed was an opportunity to make them. As it turned out, my sister Karen was stopping by after work one night, which sounded like a perfect excuse. Some comfy chairs and a bench strewn with a few appetizers in my shady front yard, was the perfect setting.
While this may qualify as a BLT without bread, don’t be deceived into thinking it’s healthy. Anything that starts with a pound of bacon and serves 4 people is an indulgent appetizer! However, many appetizers are indulgent (think chips and dip.) Because this post is also coming on the heals of the Roasted Broccoli White Bean Salad my conscience is clear. Actually, my posting logic is similar to my eating logic. Whenever possible, try to balance out indulgent food options with an array of healthy options as well.
A Few Observations
A picture is worth a thousand words as they say, so here’s the link to the video for BLT Sushi which shows the bacon weaving and assembly techniques. Silly side bar – there’s a huge rant in the comments section of this video because the initial recipe was called BLT Sushi. Apparently this offended a few folks. These folks seemed a little too passionate about the subject for me. I decided to dodge that mess and rename them BLT Roll-Ups.
There was also a suggestion in the comments about adding avocado, which sounded like a great idea to me. My plan is to give that a try next time. Be sure to wrap the roll-ups as tightly as possible. This will help them stay together, especially if you cut them into smaller pieces like I did. A few toothpicks will also help hold them together.
A word of caution on cooking the bacon. In this recipe, it gets baked until done, but not crisp. If you are a person that can only eat your bacon crisp, these BLT Roll-Ups are not for you. I happen to use thick cut bacon, which required additional cook time. My guess is the initial recipe did not. I think either one will work, you just need to adjust your cook time accordingly.
BLT Roll-Ups
Ingredients
- 10 slices bacon
- 2-3 tbsp mayo
- 1 c. chopped tomatoes
- 1 c. shredded romaine
- 1 avocado, chopped optional
- kosher salt, to taste
- black ground pepper, to taste
Instructions
- Preheat oven to 400º. On a large baking sheet with a wire rack placed on top, line 5 slices bacon side by side. Lift one end of every other bacon slice and place another bacon slice on top of the lifted pieces. Lay the slices back down. Next, lift opposite bacon slices back and place a bacon slice on top. Lay the slices back down. Repeat the weaving process until you have a bacon weave of 5 strips by 5 strips. I highly recommend watching the video. Weaving the bacon is much easier that it sounds!
- Bake until cooked but still pliable, 20-23 minutes for thin cut bacon and 30-33 minutes for thick cut.
- Pat bacon weave with paper towels to drain fat and transfer to a piece of saran wrap (helps for rolling!)
- Spread a thin layer of mayo on top of bacon weave, then top with tomatoes (keep them on the bottom 1/3 for easier rolling), avocado (if using) and romaine. Season with salt and pepper.
- Starting from the bottom, roll tightly, using the plastic wrap to assist in the process. If necessary, secure with toothpicks. Slice and enjoy!
