Blue Cheese BLT Salad

Packed with satisfying goodies, you will fall in love with this Blue Cheese BLT Salad!

We start with chopped romaine, but other mixed greens would work as well. The real story is the balance of fruity, smokey, salty and rich flavors layered on top. Refreshing Mandarin oranges and sweet cherry tomatoes offset the crisped bacon, salty blue cheese and the bite of sliced red onion. Then of course there’s avocado. While everything IS better with bacon, I contend that everything is better with avocado too! Last but not least, everything is tossed with a light and tangy apple cider vinaigrette.

This recipe is known in my family as Jeff’s salad. That’s because it’s my brother Jeff’s go-to salad for family gatherings. It’s actually a favorite of mine as well, along with a host of other recipes in my tattered and well used Land O Lakes Treasury of Country Recipes cookbook. Blue Cheese BLT Salad

A delicious green salad packed with tons of goodies – bacon, avocado, tomatoes, Mandarin oranges and blue cheese with a tangy apple cider vinaigrette.

Ingredients

Dressing

  • 1/4 cup cider vinegar
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon finely chopped fresh garlic
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

Salad

  • 1 10-ounce package lettuce
  • 1 cup halved cherry tomatoes
  • 1 large avocado peeled, cut into wedges or chunks
  • 1 can 11 oz. mandarin oranges, drained
  • 8 slices crisply cooked bacon crumbled
  • 1/2 cup thinly sliced red onion
  • 1/2 cup crumbled blue cheese

Instructions

Dressing

  • Combine all salad dressing ingredients in a salad shaker or a small jar with tight fitting lid and shake to combine.

Salad

  • Place lettuce in serving bowl and arrange remaining salad ingredients on top. Pour dressing over salad and toss to combine. Or, you can portion the salad into individual bowls or salad plates and drizzle with dressing.
