Broccoli Chicken Divan – Super Easy Meal
I received a few jabs on my last very involved recipe, so I’m hoping to redeem myself with this one for Broccoli Chicken Divan. I have actually learned an important lesson after a year of food blogging. While everyone loves the idea of fancy food, most people are looking for easy recipes that work in the real world. Can it be made in a short amount of time? Does it have a fairly short list of ingredients that are easy to find? This recipe hits that nail on the head!
Hot Dish or Casserole?
Is this considered a casserole or a hot dish? That typically depends on where you call home. If you come from Minnesota, we call this sort of concoction a hot dish. Unlike most recipes, however, this one doesn’t include a standard hot dish carb. That’s good news if you lean toward the low-carb side of life. Essentially, it’s just rotisserie chicken, steamed broccoli, canned soup, cheese and a light sprinkle of bread crumbs. If you are feeding a crowd that needs a more hearty version, you can serve this over some instant rice, egg noodles or mashed potatoes.
Setting Expectations
This recipe won’t blow your foodie friends away. It will, however, fill up the kids and your own tummy. It is also healthier and more satisfying than a bowl of cold cereal or some other short-cut excuse for a meal. Now that we have expectations set properly, I hope you enjoy this easy meal and will let me know what you think if you give it a try.
Broccoli Chicken Divan
Ingredients
- 1 lb. fresh broccoli cut into small bite size florets or you can chop it roughly
- 2 c. cubed rotisserie (or other cooked) chicken meat
- 1 can condensed cream of chicken soup 10.75 oz
- 1/3 c. milk
- fresh ground black pepper to taste
- 3/4 c. shredded cheddar cheese
- 1 tbsp. melted butter
- 2 tbsp. dried bread crumbs plain or seasoned
Instructions
- Preheat oven to 450 degrees.
- Place broccoli in a saucepan with enough lightly salted water to cover. Bring to a boil and cook for 5 minutes, or until tender (time will vary depending on the size of the broccoli.) Drain.
- Place the cooked broccoli in a 9 in. pie plate. Top with chicken.
- In a bowl, mix the soup, milk and black pepper to taste. Pour over the chicken and broccoli. Sprinkle with cheese.
- Mix the bread crumbs with melted butter and sprinkle over the cheese.
- Bake in preheated oven for 15 minutes, or until bubbly and lightly browned.
