Hankering for a burger with a gourmet twist? Try this delicious Butter Stuffed Gruyere Burger. If you’re like me, you’re instantly drawn to anything that starts with the words “butter stuffed.” While the butter essentially melts into the meat as it grills, it does add richness and keeps the burger tender. There’s minced Gruyere cheese, Dijon mustard and Worcestershire sauce that also add wonderful savory and cheesy elements. This is an easy grilling recipe that’s sure to impress your friends and family this Memorial weekend or anytime you grill this summer. Thanks to HyVee for another great recipe from their Seasons magazine.

Caramelized Onion & Roasted Red Pepper Saute

My unique spin on this HyVee recipe was to combine the HyVee caramelized onion recipe with the suggested roasted red pepper strips. While the HyVee recipe calls for sliced onions, I decided to chop them along with the roasted red peppers. My hunch was that fresh thyme would also be a good complement to the veggies and the Gruyere. That hunch proved to be a good one! Another tasty idea would be to throw some sliced mushrooms into the saute.

If you have enjoyed my Sante Fe Burger or Blue Cheese Mushroom Burger recipes, you know I typically skip the bun. For blogging purposes, and because most of the burger eating population uses a bun, I photographed these tasty morsels with buns. My preference though is to break out a knife and fork and enjoy my burger with some mustard and an obscenely large dollop of mayo on the side. Don’t judge. I am a self professed fat junkie.

Ingredients

Burgers

  • 1 1/2 lbs 80% lean ground beef
  • 3 oz Gruyere cheese, chopped into small dice
  • 2 tsp Dijon mustard
  • 1 1/2 tsp Worcestershire sauce
  • 1/4 tsp ground black pepper
  • 2 tbsp chilled salted butter, cut into 4 pats
  • 4 buns, if desired

Caramelized Onion & Roasted Red Pepper Saute

  • 1 small sweet onion, sliced or chopped
  • 2/3 cup roasted red pepper, chopped or sliced into strips patted dry
  • 1 tbsp salted butter
  • 1 tbsp olive oil
  • 1 tsp packed brown sugar
  • 3/4 tsp chopped fresh thyme

Instructions

Burgers

  • Preheat grill to medium heat and grease grates.
  • Combine ground beef, cheese, Worcestershire sauce and black pepper. Form 8 patties about 4 inch in diameter. Place butter pats in center of 4 patties. Top with remaining patties and pinch edges to seal.
  • Grill burgers for 15-20 minutes turning halfway through to medium (160 degrees.) Serve in buns, if desired, with Sauteed Onions & Roasted Red Peppers and additional condiments of your choice.

Suateed Onions & Roasted Red Peppers

  • Cook onion, brown sugar and thyme in 1 tbsp each butter and olive oil in large skillet over medium low heat for 12-15 minutes or until onion turns golden brown, stirring occasionally. Increase heat to medium and add red peppers (after they have been patted dry) and saute for an additional 2-3 minutes. Top prepared burgers with Caramelized Onion & Roasted Red Pepper Saute.

Notes

Additional toppings that would be great include:
  • sauteed mushrooms
  • roasted garlic mayo
  • arugula or your favorite salad greens
