Easy to make and slightly exotic in flavor, Curried Cashew Chicken salad is impressive enough for a special lunch but easy enough for an everyday meal.
Fruit in chicken salad was not something I was fond of in the past. Savory flavors have always been my preference. On my culinary journey, however, I’ve come to appreciate complementary flavors. In this case, the heat of the curry and the sweetness of the grapes. Another great example, is a touch of saltiness, when combined with chocolate. Or creamy coleslaw balancing out a savory barbecued pork sandwich. The magic is in the two distinct flavors tasting better together.
Experiment when you get the chance. Try combining different textures and flavors. You may also find that opposites attract!

Curried Cashew Chicken Salad
Ingredients
- 1/4 cup mayonnaise I recommended Hellmann’s light
- 1/4 cup sour cream
- 1 1/2 tablespoons curry powder
- 1/2 tablespoons honey
- 3/4 tsp salt
- 3 cups cooked chicken from rotisserie chicken, cut into bite sized pieces
- 1/2 cup salted cashews
- 3 stalks celery thinly sliced
- 1 cup grapes seedless, halved
- 3 scallions/green onions thinly sliced
- 1 pinch cayenne pepper optional
Instructions
- Combine mayonnaise, sour cream, curry powder, honey and salt in a medium bowl.
- Add chicken to dressing, along with cashews, celery, grapes and scallions; toss well. Taste, adjust seasoning and add pinch of cayenne pepper if desired.
