In our family, the person having a birthday selects their favorite treat to celebrate the big day. This year, my husband Mike actually created the recipe for his birthday dessert! No standard birthday cake for this guy. In fact, cake is not his thing at all. When I asked what he wanted, he pondered his options and then suggested making a good thing even better. Mike’s standard motto with desserts is that more is better! That translated to using chunky peanut butter and doubling the melted chocolate and butterscotch mixture on top. The result is scrumptious! So good in fact, that we decided they should be christened Deluxe  Scotcheroos.

Tip – Don’t over cook the sugar and Karo Syrup mixture– just bring it to a boil and remove immediately from heat. If you over boil it, the bars will become hard and difficult to cut.

This recipe was so good I wanted to publish it on ItsThyme2Cook for easy future access. I recognize that this dessert is an oldie (but a goodie) and can be found on countless websites. But it’s much easier for me to remember these special tweaks if I create an online recipe. This also allows me to check the ingredients list at the grocery store as well capture the instructions. I am slowly publishing all my favorite recipes because it’s much easier than looking through my cookbooks and files.

Deluxe Scotcheroos

Deluxe Scotcheroos are an easy spin on a family favorite. Chunky peanut butter and extra chocolate  and butterscotch topping and more make them irresistible!

Ingredients

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 1/2 cup extra chunky peanut butter or use the traditional creamy peanut butter
  • 5 cups Kellogg’s® Rice Krispies® cereal
  • 1 package 12 oz semi-sweet chocolate morsels
  • 1 package 12 oz butterscotch chips

Instructions

  • Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove immediately from heat (do not overcook or else the bars will become hard.) Stir in peanut butter. Mix well. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated. Pat mixture into 13 x 9 x 2-inch pan coated with butter or cooking spray (but don’t pack down firmly.) Set aside.
  • Place chocolate chips and butterscotch chips in medium bowl and microwave on high for 90 seconds then stir. Continue to microwave for 10-15 seconds intervals, stirring each time, until chips are melted and smooth. Spread evenly over cereal mixture. Let stand until firm. Cut into bars when cool.
  • Note: Before measuring the corn syrup, coat your measuring cup with cooking spray–the syrup will pour easily out of the cup.
