Doritos Casserole with Chicken is a fun and easy weeknight meal the whole family will love.
Any meal that starts with rotisserie chicken is a plus in my book. Next, grab a can of corn, some lively green onions, shredded cheese and stir into a creamy sauce made with only two ingredients – cream of chicken soup and chive whipped cream cheese. Did I mention it was easy? But wait, there’s more! Loads of crunchy, Doritos nacho chips with melted cheese are layered on top. It’s like having nachos on top of casserole.
Spicing Up Your Doritos Casserole with Chicken
I am constantly on the lookout for meals that are easy to eat for my hubby Mike. After living with ALS for the last 6 years, it’s a monumental task for him to hold a fork. That means cheesy casseroles that stick to the fork make his life easier. Mike gave this casserole two thumbs up but also had some suggestions for adding a little more spice.
Don’t get me wrong, the Doritos lend plenty of flavor to this dish. But Mike loves to pump up the heat on anything with a Mexican vibe. You could use any combination of these ideas, or try them all if you want to go nuclear.
- Add a small can of diced jalapeños
- Use taco flavored shredded cheese
- Opt for Flamin’ Hot Doritos
Additional Tips
Chive Whipped Cream Cheese – I could only find regular chive cream cheese so I whipped it myself before adding the soup. I included this as a note in the recipe.
Salt Factor – we did find this recipe a tad salty so I decreased the added salt from 1/2 tsp. to 1/4 tsp. Truth be told, I think it would taste good even if the salt was omitted. The Doritos, cheese, and canned soup all supply a fair amount of salt on their own.
Doritos – the recipe called for 3 cups of chips broken into pieces, which is what I used. But the casserole is well covered with 2 cups, so choose your level of crunchiness! I also left my Doritos in medium to larger pieces vs crushing them small.

Doritos Casserole with Chicken
Ingredients
- 8 oz Philadelphia Chive Whipped Cream Cheese or regular Chive Cream Cheese (see note below)
- 10.5 oz condensed cream of chicken soup
- 1 bunch sliced green onions, green parts only
- 3 cups chicken cooked, shredded
- 8.75 oz canned corn
- 3 cups shredded Mexican cheese blend divided
- 1/4 tsp salt or omit, if lower salt preferred
- 1/2 tsp pepper
- 1 tsp garlic powder
- 2-3 cups Doritos, broken into pieces
Instructions
- Preheat oven to 400°F.
- Note: If you purchased regular vs whipped cream cheese, let it sit at room temperature for 15 minutes. Then whip in large mixing bowl until it resembles whipped cream cheese.
- Add chicken soup and whip mixture together until smooth.
- Set aside 1/4 cup of the sliced green onions and add the remaining onions to the mixing bowl.
- Also add the shredded chicken, drained canned corn, 2 cups of the shredded Mexican cheese blend, salt (if using), pepper and garlic powder to the bowl.
- Stir all of the ingredients together until fully combined.
- Grease a 9 x 13 inch baking dish (preferably glass.) Spread mixture out evenly in dish.
- Scatter the Doritos pieces on top.
- Sprinkle the remaining cup of shredded Mexican cheese blend and 1/4 cup of chopped green onions on top of the Doritos.
- Bake until the cheese on top is starting to brown. 17-20 minutes.
Notes
- Use Taco flavored shredded cheese for extra flavor
- Add a small can of drained, chopped green chilies or jalapenos
- Use Flamin’ Hot Doritos
