Eggs For Any Meal

Is meat hard to find at your grocery store? Eggs for Any Meal, a collection of delicious egg-based recipes, is the answer!

The incredible, edible egg can produce a casual scramble, a picture perfect quiche, a layered sandwich or this hearty skillet baked egg dish with ham and hash browns. Just add a salad and you have a complete meal!

In addition to being versatile, eggs are readily available! (Trusting this is true for most everyone.) This is a big plus in the new crazy world of shopping during the COVID-19 pandemic.

In fact, the availability of eggs is the inspiration for this post. Someone recently highlighted in a comment that meat was hard to find. That got me thinking. What protein is easy to find? Eggs! Technically, a number of these recipes include bacon, ham or sausage. But you can easily adapt the recipe if you can’t find or don’t prefer the suggested meat.

Eggs for Every Meal

In addition to being easy to find, eggs are rich in protein. They can also be prepared healthy or indulgent to suit your mood and calorie counting goals. Best of all, this collection of egg recipes can work equally well for breakfast lunch or dinner.

Sandwich

Scrambled

This Mexican Egg Scramble is my go-to for a non-fussy egg dish with big flavor. I love the crushed tortilla chips, cheese and salsa combination. Wake up little taste buds!

Quiche

Easter might be a more simple affair for many of us this year. But it can still have a touch of elegance with this classic spin on a ham, asparagus and Swiss quiche. It’s also quite easy if you use a ready-made pie crust.

Frittata

This frittata, also known as a crustless quiche, features savory Italian sausage, crumbled feta and Swiss chard. It also reheats well, making it a nice option for several meals throughout the week.

Enchilada

Breakfast Enchiladas are a delicious and hearty entree bursting with scrambled eggs, spicy sausage and cheesy chili sauce. You can opt to purchase cheese sauce to make this recipe even easier.

Baked

This super easy recipe would be a fun cooking project with the kiddos. Canadian bacon is tucked into muffin tins then topped with an egg and shredded cheese. After baking, finish with a sprinkle of cooked chopped bacon & fresh snipped chives. It doesn’t get any easier!

Gourmet

I couldn’t resist sharing at least one egg recipe that leans toward the gourmet side. This creation was served at one of our Gourmet Group brunches. Hearty cornbread waffles are topped with a spicy tomato ranch-style sauce, fried eggs and cilantro crema.
