Ham, Gruyere & Apple Galettes
Galettes are free form tarts which are typically sweet, similar to a fruit pie. Ham, Gruyere & Apple Galettes are a personal-sized, sweet/savory version, perfect for brunch. Even though they look fancy, prepared pie crust keeps things quite easy. In fact, this recipe came from the Cooking with Kids section of EatingWell magazine. So, you’ve got this!
A delicious combination of apple butter and whole grain mustard is spread into the center of the galettes, Then ham and apples are arranged on top and sprinkled with shredded Gruyere and chopped thyme. Thirty minutes later, you have these golden brown beauties to enjoy. Yummy!
Tip for Cutting Galette Circles:
Find a bowl, plate, or anything which provides a 6 inch circle. Place on rolled out dough and use a small sharp knife to cut around the edge to create your galettes.
Brunch Menu
I rounded out our brunch menu with Cream Cheese Scrambled Eggs. My version incorporated chopped parsley, chives and tarragon which I stirred into the eggs before adding to the pan. Then I sprinkled the eggs with a little more of the herb mixture just before serving. Very tasty! Fresh fruit and oven roasted asparagus completed our brunch menu. If you haven’t roasted asparagus yet, for heaven’s sake, why not?
Roasted Asparagus: Wash, dry and trim woody ends from asparagus. Place on a baking sheet, spray generously with olive oil cooking spray or drizzle with a little olive oil. Toss to coat. Season with Kosher salt and freshly ground black pepper. Roast in a 400 degree oven for 8-12 minutes (depending on thickness.) Asparagus should be just tender when poked with a fork and slightly crisped.
Ham, Gruyere & Apple Galettes
Ingredients
- 2 prepared pie crusts 14-16 oz. package set out at room temperature for 15-20 minutes
- 1/4 c. apple butter sweetened or unsweetened
- 2 tbsp. whole grain mustard
- 2 medium apples sliced 1/8″ thick I used Honeycrisp
- 3 oz. deli ham cut into pieces similar in width to the apples (I used Virginia ham)
- 6 tbsp. finely shredded Guyere cheese
- 2 tsp. coarsely chopped fresh thyme plus more for garnish, if desired
- 1/4 tsp. ground pepper
- 1 large egg
- 1 tbsp. water
Instructions
- Preheat oven to 400 degrees. Coat a large baking pan with cooking spray.
- Place one pie crust on a lightly floured surface. Dust top of crust lightly with flour and roll into a 12-inch circle. Cut two 6-inch rounds from the crust. Gather the dough scraps into a ball and roll out to same thickness. Cut one more 6-inch round. Repeat with the remaining crust, for a total of 6 rounds.
- Combine apple butter and mustard in a small bowl. Spread about 1 tablespoon on each crust, leaving a 1-inch border around edges of each circle. Layer rows of apple and ham slices decoratively on top. Sprinkle each with 1 tablespoon Gruyère, some thyme and pepper.
- Fold the sides of the dough up over the edge of the filling, pleating/pinching the dough together as you go. Transfer to the prepared pan. Whisk egg and water in a small bowl and brush the edges of the galettes with it. Bake the galettes until the apples are tender and the crusts are a deep golden brown, about 30 minutes. Garnish with more thyme, if desired.
