Due to a pesky mid-April snowstorm, our full gourmet group had not gathered for ages. Yet nothing reunites old friends like great food and fun cocktail parings. Rick & Tracey selected a Tex-Mex theme which turned out to be a perfect option for this summer dinner party. Read on to explore Margarita Pie and a full menu of Tex-Mex recipes!
Tex-Mex Cocktail Appetizer & Grapefruit Shrub Margaritas
Brian and Lynda’s Tex-Mex Shrimp Cocktail with mango salsa kicked off our festive evening. They put a unique spin on this dish by adding some roasted corn to the salsa, which tasted great. But their creativity doesn’t stop there! They also mixed up Grapefruit Shrub Margaritas which turned out to be a fun and refreshing pairing.
Tex-Mex Chicken Taco Soup & Mojitos
Next, Jeff & Bridget treated us to Tex-Mex Chicken Taco Soup and Mojitos for our first course. I really enjoyed this flavorful, thick soup which had a nice touch of heat. A soup toppings bar let everyone embellish to their own taste and kept the mood casual. It was also fun to watch this dynamic duo muddle, measure and serve their cocktail, featuring fresh mint from their own garden!
BBQ Sauced Beef Brisket, Grilled Herbed Corn & Tex-Mex Quinoa Salad
Our hosts Rick & Tracey made a mouth-watering beef brisket with a sweet & spicy home-made BBQ sauce. This main course deserves high points for being easy to prepare in advance, special enough for company and delicious! A lovely Argentinian red blend called Unanime married nicely with the heat from the BBQ sauce.
Beef Brisket
Ingredients:
- beef brisket (4-5 lbs. serves approximately 8 people)
- package of Lipton Onion Soup Mix
- 14.5 oz. can beef broth
Directions:
Place brisket in baking dish and bake uncovered for 2 hours at 300 degrees. After 2 hours of baking, sprinkle onion soup mix over brisket. Pour can of beef broth in baking dish and cover brisket with aluminum foil. Bake for another 3 hours. Slice and enjoy.

Rick and Tracey took a divide and conquer approach to finish off their side dishes, which were also prepped in advance. Never underestimate the wisdom of prepping in advance when you’re entertaining. When there’s less work to do after your guests arrive, everyone has more fun.

Margarita Pie
I served up Margarita Pie for our Tex-Mex grand finale. Essentially this is a key lime pie spiked with tequila and triple sec. I took the whipped cream topping up a notch by adding mascarpone. This allows me to make the topping in advance and produces a thicker and richer topping. Juicing the key limes, which are much smaller than regular limes, was quite an experience. Very glad I had an electric juicer! After a little experimentation, we selected champagne as our beverage of choice for dessert. It may sound like an unlikely pairing, but it actually worked quite well. I hope you enjoy this Margarita Pie and all of these other yummy Tex-Mex recipes!
Margarita Pie
Ingredients
Pie
- 1 1/2 c. graham cracker crumbs
- 1/3 c. sugar
- 6 tbsp. melted butter
- 2 cans sweetened condensed milk 14 oz. ea
- 3/4 c. sour cream
- 3/4 c. key lime juice
- 1 tbsp. grated lime zest
- 2 tbsp. tequila
- 1 tbsp. triple sec
- lime slices for garnish if desired
Topping
- 1 c. whipping cream
- 1 tbsp. powdered sugar
- 4 oz. mascarpone cheese
Instructions
Pie
- Preheat oven to 350 degrees. Combine graham cracker crumbs and sugar in a medium size bowl, Stir in butter until well incorporated with crumbs. Press into bottom and sides of a 9 inch pie dish. Bake for 10 minutes. Remove from oven and keep oven at 350.
- In a medium bowl combine condensed milk, sour cream, lime juice, zest and liquor. Mix well and pour into baked crust. Bake at 350 degrees until a few pin-sized bubbles burst on the surface, about 10-11 minutes, DO NOT BROWN. Chill thoroughly before serving (a least a few hours.)
Topping
- Whip cream until soft peaks form. Add powdered sugar and continue beating to firm peak stage. Gently stir macarpone in a small bowl to soften, then fold into beaten whipped cream until well combined. Spread or pipe onto pie. Garnish with lime slices, if desired.
