Oven Roasted BBQ Salmon
Easy Entertaining
This is one of those rare recipes that’s easy and great for a special occasion! The preparation is so simple. Marinate the salmon for 1 hour, pat on a dry rub made from a few simple ingredients and then bake. That’s all there is to it! A preparation like this is easy enough to serve as a week day meal, yet it’s also special enough for a dinner with friends. In fact, I made this Oven Roasted BBQ Salmon for our friends Denise and Scott when we had them over for dinner recently.
Baking vs. Grilling Salmon
Minnesotans are a hardy people that wouldn’t think twice about digging a path to the grill in a blizzard to cook up some dinner. Yet there are times when you just don’t feel like standing outside by the grill, in the dark (or perhaps the rain) when the party is inside. This oven roasted method is a great option for those times.
Rounding Out the Menu
In addition to the salmon, I served a few simple side dishes to round out the menu:
Green Beans with Bacon, are a jazzed up veggie dish which includes garlic, onion, red pepper flakes, lemon, and of course bacon. We all know everything is better with bacon. As it turns out, green beans are one of the few veggie options Denise likes and she had high praise for this dish. Yeah! It always gives me a little thrill when I randomly pick just the right thing.
I also served Garden Rice Pilaf, a very easy side dish which gets a touch of color from carrots, parsley and green onion, along with some crunch from toasted slivered almonds. You can find this recipe below along with the salmon recipe.
Given the clean plates all around the table, it appears the entire main course was a big hit.
While the side dishes were lucky random selections, the Bread Pudding with Hot Buttered Rum Sauce was not random. I made this recipe for Denise previously and remembered how much she had enjoyed it. My hubby is also a big bread pudding fan, so I managed to score “good wife points” for making this dessert as well. Oven Roasted BBQ Salmon & Garden Rice Pilaf
Ingredients
Oven Roasted BBQ Salmon
- 1/4 c. pineapple juice
- 2 tbsp. fresh lemon juice
- 4 6 ounce salmon fillets
- 2 tbsp. brown sugar
- 4 tsp. chili powder
- 2 tsp. grated lemon zest
- 3/4 tsp. ground cumin
- 1/2 tsp. kosher salt
- 1/4 tsp. ground cinnamon
- cooking spray
- lemon slices optional
Garden Rice Pilaf
- 2 3/4 c. water
- 1/4 c. butter
- 2 tbsp. instant chicken bouillon
- 1/4 tsp. salt
- pinch of fresh ground black pepper
- 1/4 tsp. minced garlic
- 1 1/4 c. uncooked long grain rice
- 1/2 c. chopped carrots
- 1/2 c. toasted slivered almonds
- 1/4 c. chopped parsley
- 2 tbsp. sliced green onion green parts only
Instructions
Oven Roasted BBQ Salmon
- Combine first 3 ingredients in a ziplock plastic bag. Seal bag and refrigerate 1 hour, turning occasionally.
- Preheat oven to 400 degrees.
- Remove salmon from bag and discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon). Pat onto top of each fillet. Place in 11 x 7 (or larger) baking dish coating with cooking spray. Bake 12-17 minutes, or until fish flakes easily when tested with a fork (time will vary based on the thickness of fillets.) Serve with lemon slices, if desired.
Garden Rice Pilaf
- In 2 quart saucepan bring water, butter, chicken bouillon, salt, pepper and garlic to boil. Add rice and carrots; return to full boil. Reduce heat to low and simmer, covered, until rice is tender (25 to 30 minutes.) Stir in remaining ingredients.
