Easy Make-Ahead Option
There are a few things I like about these Pinwheel Appetizers. First and foremost they are quite easy to make. They also use of a number of ingredients I typically have on hand. So they tend to be something I can whip up, if I find myself entertaining on the fly.
The other thing that’s great about this recipe, is that you make them in advance. Either make them a few hours before you need them, or the day before. What could be easier than just unwrapping, slicing and serving a great tasty little morsel?
Enjoy as a Sandwich
Another tasty option is to serve these as a sandwich. I came up with this idea when I needed to throw together an easy lunch at the cabin. Instead of taking requests for sandwich preferences, I made a batch of these tortilla wraps in the morning. At lunch, I cut them in half and piled them on a platter for people to help themselves. Add some chips, bars, or whatever, and your’re all set. Everyone loved them!
These would also be a convenient make ahead option for a brown bag lunch at work. Especially if you find yourself in a rut and want something a little different. We’ve had these wrapped rolls in the frig for several days and they keep quite well. Make up a few at the start of the week and enjoy them for the next few days.
Pinwheels Appetizers
Ingredients
- 1/3 cup mayo
- 1 teaspoon minced chipotle pepper in adobe sauce
- 1 1/2 teaspoons fresh lime juice
- 5 flour tortillas approx. 7 1/2 inch
- 10 each thin slices of smoked ham and smoked turkey lunch meat
- 1 avocado thinly sliced tossed with a fresh squeeze of lemon juice (to prevent browning)
- 2 thinly sliced green onions green parts only
- 1/4 pound shredded monterey jack & cheddar cheese blend
Instructions
- Preheat oven to broil (use lower setting if you have a high and low setting.) Line a baking sheet with tin foil.
- Combine mayo, minced chipotle and lime juice in small bowl and stir until well blended. Spread the mayo mixture on each of the tortillas, covering the surface, dividing it out equally. Top each with 2 slices of turkey and 2 slices of ham, placing meat toward one side of the tortilla (this will helping during the roll up process.) Divide avocado slices across tortillas, placing them on top of the lunch meat. Sprinkle the top of the meat with a little sliced green onion and the shredded cheese.
- Slide a tortilla onto the foil lined baking sheet and broil until cheese starts to melt, about 1 minute (watch carefully so the tortilla doesn’t start to brown.) Remove from oven and let cool on the pan for a few minutes until you can roll it up. Roll tightly and wrap in plastic wrap. Repeat with remaining tortillas.
- Chill for several hours to firm them up. Unwrap and slice into 1/2 to 1 inch slices for appetizer-sized bites. You can also cut full tortilla in half for a sandwich-sized portion. Enjoy!
