Pumpkin Delight

This recipe transforms a purchased cake mix and canned pumpkin into a delightful and fairly easy-to-make dessert.

Ingredients

  • 1 can 15 oz pumpkin (not pumpkin pie mix)
  • 1 can 12 oz evaporated milk
  • 3 eggs
  • 1 cup sugar
  • 4 teaspoons pumpkin pie spice
  • 1 yellow cake mix or spice cake mix
  • 1 1/2 cups chopped pecans
  • 3/4 cup butter melted
  • Whipped cream for topping
  • Cinnamon if desired

Instructions

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray bottom and sides of 13×9-inch pan. In medium bowl, beat pumpkin, milk, eggs, sugar and 4 teaspoons pumpkin pie spice with wire whisk until smooth. Pour into pan.
  • Sprinkle dry cake mix over pumpkin mixture. Sprinkle with pecans. Pour melted butter evenly over top.
  • Bake 50 to 60 minutes or until knife inserted in center comes out clean. Cool 30 minutes.
  • Serve warm or chilled with dollop of whipped cream sprinkled with cinnamon. Store covered in refrigerator.

    Howdy, I do beliewve your blog may be having browser compatibility issues.
    Whenever I take a look at your site in Safari, it looks fine but when opening
    in I.E., it’s got some overlapping issues. I simply wanted
    to provide you with a quick heads up! Apart from that, wonderful website!

      Thanks for the heads up. I know different browsers can produce different viewer experiences. IE seems to me the most troublesome. I will check with the my technical contacts to see if they can offer any advice. I appreciate the positive feedback on the site as well.

      I am using the free Mace theme in WordPress and designed it myself. I also downloaded a plug in or two to get some features like Recipes, Social Sharing, a “Like” Feature and a slide show to for multiple pictures in a post. I highly recommend checking out the free classes that WordPress offers to learn more about blogging at:
