This is a recipe featuring just a few ingredients. But because it uses premium versions of these ingredients, it takes this appetizer to a new level.

Here’s what we are using:
- European butter, also called cultured butter, which is higher in butter fat and deliciously rich. When it’s blended with fresh snipped chives to create a compound butter, it’s as decadent as dip. I used unsalted Plugra European Butter.
- A whole crusty baguette, split, then spread generously with the herb butter. I purchased a baguette which needed to be crisped for a few minutes in the oven. Then I let it cool before continuing.
- Thinly sliced, peppery radishes layered like shingles onto the baguette. I recommend using small green top radishes because they tend to have more heat and crispness. You could also opt for watermelon or French breakfast radishes if you are lucky enough to find some at your local farmers market.
- A simple parsley salad tossed with additional chives, lemon juice & olive oil. Then a liberal sprinkle of flake sea salt as the final flourish. I highly recommend Maldon Sea Salt which I use as my preferred finishing salt.

Radish Sandwiches Stories
I am no stranger to radish sandwiches. My Mom turned me on to this simple combination when I was quite young. Of course we didn’t have the high quality ingredients used in this recipe, but I still loved them. As it turns out, radish sandwiches are actually a classic French snack. Who knew Mom had such sophisticated taste?
My other radish sandwich story was born out of desperation at the cabin. We had just poured up some frosty beverages and realized we had absolutely no salty snacks. Recalling the radish sandwiches of my youth, I buttered up some hot dog buns, added sliced radishes and a sprinkle of sea salt. Again, not on the level of this recipe, but my highly skeptical family ate them and pronounced them quite tasty.
Radish and Chive Butter Baguette
Ingredients
- 7 tbsp European-style unsalted butter, softened
- 3 tbsp chives, divided
- 1/4 tsp Kosher salt, plus additional for seasoning
- 1/4 tsp freshly ground black pepper, plus additional for seasoning
- 1 tsp lemon juice
- 1 tsp extra virgin olive oil
- 1 cup coarsely chopped flat leaf parsley
- 1 10 inch crusty baguette, halved lengthwise
- 4 ounces radishes, trimmed and sliced thin
- flake sea salt
Instructions
- Combine butter, 2 tbsp chives, 1/4 tsp salt and 1/4 tsp pepper in bowl.
- Whisk lemon juice, olive oil and remaining 1 tbsp of chives in a medium bowl. Add parsley and toss to coat. Season with salt and pepper to taste.
- Spread butter mixture over cut sides of baguette. Shingle radishes (overlap) onto butter bread. Top with parsley salad. and sprinkle with flake sea salt to taste. Cut into serving pieces,
