This light and simple fruit salad leans toward the savory side with the addition of avocado and a citrus dressing.
Ingredients
- 1 avocado cubed ripe, but not mushy
- Pink grapefruit segments or use a combination of pink and white grapefruit
- Blackberries
- Walnuts pieces
- 1/4 cup fresh squeezed orange juice
- 2 tablespoons honey
- 1/2 teaspoon White Balsamic Peach Vinegar or other white fruit balsamic vinegar
Instructions
- Combine avocado, with *pink grapefruit segments and blackberries in individual bowls
- Scatter walnut pieces over fruit
- Put orange juice, honey and vinegar into small jar, shake to combine and drizzle over the fruit.
- * To create grapefruit segments, use a sharp knife to cut peel and pith from around the grapefruit, cutting just slightly into the fruit, so nothing but flesh is left. Then cut between the segments to release the fruit, making sure that no white membrane between the segments is still attached.
