Roasted Cherry Bourbon Milkshake with Hot Fudge Sauce

Sue and Gary were assigned to the dessert course for our Spirited Gourmet Gathering. This dynamic duo hand-crafted their boozy adult treats, as we waited in anticipation to taste the exotic creation. One of the things I’ve really come to appreciate about Sue, is her attention to detail. This gal takes care of the little things to make everything flow correctly and look extra special. In this case, she tracked down extra wide straws to literally ensure these chunky milkshakes would flow properly! Sue also took the time to make her own fudge sauce and to drizzle the inside of the serving jars for a special presentation touch.

New Appreciation for Bourbon

I typically steer clear of all brown liquors (stemming from a Southern Comfort incident at a tender age, which I do not care to explain further.) But I was pleasantly surprised to learn that combining roasted cherries, ice cream and hot fudge with bourbon, creates a concoction that’s actually quite delicious! I don’t expect to start sipping bourbon on the rocks as a nightcap anytime soon, however.

You can hit the easy button by purchasing hot fudge sauce vs. making your own. Roasting the cherries in advance also simplifies the last minute milkshake making process. Just combine, blend and enjoy!

Ingredients

Roasted Cherries

  • 1 1/2 c. fresh cherries pitted with stems removed
  • 1/2 tsp. olive oil
  • 1/4 tsp. salt

Hot Fudge

  • 2/3 c. heavy cream
  • 1/2 c. light corn syrup
  • 1/3 c. packed dark brown sugar
  • 1/4 c. unsweetened Dutch-process cocoa powder
  • 1/4 tsp. salt
  • 6 oz. bittersweet chocolate not unsweetened, finely chopped
  • 2 tbsp. unsalted butter
  • 1 tsp. vanilla

Milkshake

  • 2 c. vanilla bean ice cream
  • 1 c. milk
  • 1/4 c. bourbon
  • 4 tbsp. hot fudge
  • whipped cream for serving
  • cocoa nibs or mini chocolate chips for serving

Instructions

Roasted Cherries

  • Preheat oven to 375 degrees. Toss cherries with olive oil and salt, then place on a baking sheet and roast for 25 minutes, tossing once or twice during roasting. Let cool. Can be prepared in advance.

Hot Fudge

  • Bring cream, corn syrup, sugar, cocoa, salt and half of chocolate to a boil in a small saucepan over moderate heat, stirring, until chocolate is melted. Reduce heat and cook over low boil, stirring occasionally, 5 minutes, then remove from heat. Add butter, vanilla and remaining chocolate and stir until smooth. Cool sauce to warm before serving. Sauce can be made 1 week in advance and cooled completely, then chilled in an airtight container or jar. Reheat before using.

Milkshakes

  • To make milkshakes, combine ice cream, milk, bourbon and cherries in a blender and puree until smooth. Drizzle hot fudge over the inside of each glass, then pour milkshake into glass. Top with whipped cream and cocoa nibs or mini chocolate chips.
