Sheet Pan Garlic Butter Tilapia & Veggies
This is actually a super easy meal which is perfect for a week day. Whip up some garlic butter and drizzle on tilapia. Then drizzle the asparagus and cherry tomatoes with olive oil and season with salt & pepper. Pop in the oven and 15 minutes later, dinner is on the table. Customize to Your Taste
This recipe can actually be used as a blueprint for a variety of options.
Fish: Not a fan of tilapia? Use cod, walleye or salmon. The bake time is actually about the same for different types of fish. Just be sure to increase your roasting time if your fish is on the thicker side. Personally, I think walleye would be great option. Shopping Tip: If you’re in the Twin Cities, Cub Foods carries bags of individually wrapped frozen walleye fillets that are great.
Veggies: I’ve seen broccoli, green beans, Brussels sprouts and other veggies used in variations of this recipe. However, be sure to cut denser veggies into similar size pieces, so they take the same time to roast.
Flavor/Herbs: You could omit the garlic and just do a lemon/ butter/herb combination. I mention this because neither my hubby or I care for mass quantities of garlic. So why did I pick a recipe called Sheet Pan Garlic Butter Tilapia? Because it looked easy and delicious! Fortunately, it’s a snap to customize this recipe. Reduce or omit the garlic, vary the dried herbs or use fresh tarragon or basil instead of parsley. Lesson Learned
True confession… the recipe I found on Pinterest looked like it used parchment paper (even though that’s not what the recipe said.) But using parchment actually kept the fish from browning properly. It trapped the moisture vs. evaporating like it would naturally on the hot pan. So, lesson learned, DON”T USE PARCHMENT PAPER. If you still find that your fish could use a little more browning, pop it under the broiler for a minute or two.
Sheet Pan Garlic Butter Tilapia & Veggies
Ingredients
- 1/4 cup butter melted
- 4 cloves garlic minced
- 2 tablespoons freshly squeezed lemon juice or more, to taste
- 1 teaspoon Italian seasoning
- 1 pound asparagus trimmed
- 3 tablespoons olive oil divided
- Kosher salt and freshly ground black pepper to taste
- 4 6-ounce tilapia fillets
- 1 1/2 cups cherry tomatoes
- 2 tablespoons chopped fresh parsley leaves or other fresh herb
Instructions
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a small bowl, whisk together butter, garlic, lemon juice and Italian seasoning; reserve 2 tablespoons and set aside.
- Place asparagus in a single layer onto one side of the prepared baking sheet. Drizzle with 2 tablespoons olive oil; season with salt and pepper to taste and toss to combine.
- Place tomatoes in a single layer in the middle of the prepared baking sheet. Drizzle with remaining tablespoon olive oil; season with salt and pepper to taste and toss to combine.
- Place tilapia in a single layer onto the opposite side of the prepared baking sheet. Drizzle with butter mixture.
- Place into oven and bake until fish flakes easily with a fork and the tomatoes begin to burst and have softened, about 13 – 15 minutes.
- Serve with reserved butter mixture, garnished with parsley or other herb, if desired.

Mike and Indecided the same thing about tilapia (I hadnāt had any for yrs.) I will definitely make this again with walleye.
