Super Easy Pancake Bites
How about fun bite-sized pancakes for the kiddos on Valentine’s morning? Full-sized sweethearts would love these too! So simple to make, they barely require a recipe. Make pancake batter, mix in fruit preserves, fresh fruit or mini chocolate chips, pour into a mini muffin pan and bake. 15 minutes later (including prep and bake time) you have lovin from the oven. Drizzle with maple syrup or pop in your mouth for a breakfast on the run.

Super Easy Pancake Bites
Ingredients
- 1 c. pancake mix Hungry Jack or Bisquick
- 2/3 c. milk I used whole milk, but use whatever you have on hand
- 1 tbsp. fruit preserves if desired
- 1/2 c. berries raspberries or blueberries and/or mini chocolate chips, if desired
Instructions
- Preheat oven to 425 degrees. Spray mini muffin pan with non-stick cooking spray.
- Combine pancake mix and milk . Stir in preserves if desired, or fresh fruit and/or mini chocolate chips. Fill cups about 2/3rds full. Note – if you want to do a variety, pour some of the batter into cups and add fruit and/or chocolate chips. Stir preserves into remaining batter and pour into pan, adding additional fruit or chocolate chips, if desired. Bake for 10 minutes, or until toothpick inserted into center comes out clean. Serve with maple syrup.
