If you are unfamiliar with shepherds pie, you may be wondering what makes this an upside-down version. Typically shepherd’s pie is a casserole of meat and veggies that is topped with mashed potatoes. The casserole is then baked to brown the potato topping. I love the traditional version, but of course it takes longer to prepare. In this version, the ground beef, veggies and gravy are all made in the same skillet. Then just ladle onto ready-made mashed potatoes piping hot from the microwave. I used Simply Potatoes Sour Cream and Chive Mashed for this recipe. Very easy and quite delicious!

No More School Lunch Envy!

This may sound crazy, but I was always envious of the kids that ate hot lunch in grade school. As one of 6 kids, my mom felt that the brown bag option was the most cost-effective. Usually, that wasn’t an issue considering the chips, Twinkies, and other goodies she included (a direct contributor to my chubbiness in grade school.) But on the days they served gravy with ground beef over mashed potatoes, the grass seemed greener on the other side of the lunch table. Great news! I am envious no more, now that I have found this gourmet spin on my favorite school lunch.

Flexibility to Make it Your Own

Like most casserole/hot dishes, you can customize this recipe to your preferences. Don’t like turnips? Use another root vegetable or just omit them. My hubby loves turnips, so I thought I’d give them another shot. In the past I have found them to be tolerable vs. enjoyable. I did a little research and found out that smaller turnips were supposed to be milder in flavor. After scouting out a smaller turnip, I was pleasantly surprised to find it more to my liking. You just never know when you might change your mind about something, so be brave and try new things! You can also mix things up by using garlic mashed potatoes or by using a different herb like thyme instead of rosemary,

Last but not least, I should mention this recipe earned the coveted “hubby endorsement.” That means, it must be good, right?

Ingredients

  • 1 tbsp. olive oil
  • 12 oz. 90% lean ground beef
  • 1 c. chopped onion
  • 1/2 c. chopped turnip (or parsnip, rutabaga, or more carrot)
  • 1/2 c. chopped or sliced carrot
  • 2 tsp. chopped fresh rosemary
  • 4 cloves mined garlic
  • 2 c. beef stock
  • 2 tbsp flour
  • 1/4 tsp. balsamic vinegar
  • 1 c. frozen green peas
  • 1/4 tsp. black pepper
  • 1/2 tsp. kosher salt
  • 4 servings purchased mashed potatoes

Instructions

  • Heat oil in a large nonstick skillet over medium-high heat. Add beef and cook 6-7 minutes or until browned, stirring to crumble into large chunks. Do not drain.
  • Add onion, turnip, carrot, rosemary, and garlic to the pan and cook covered for 10 minutes or until vegetables are tender, stirring occasionally.
  • Whisk stock with flour and add to the pan. Bring to boil, then reduce heat to medium and simmer for 4 minutes, or until thickened. Stir in balsamic vinegar, peas, salt, and pepper.
  • Microwave mashed potatoes and divide them between shallow bowls. Spoon meat/veggie/sauce mixture over the potatoes.
