Ingredients
Sesame Ginger Vinaigrette
2clovesminced garlic
1tbsp.fresh gingerpeeled and finely minced or grated
2tbsp.sesame oil
3tbsp.soy sauce
2tbsp.rice vinegar
1tbsp.honey
1/4c.canola oil
Salad
11oz.container mixed greens
15oz.can Mandarin orangesdrained
2avocados sliced or cut into chunks
1red pepper cut into thin strips
1/3c.toasted sliced almonds
Instructions
Sesame Ginger Vinaigrette
Put all ingredients in a jar with a tight fitting lid and shake to combine, until well blended. Store dressing in refrigerator if made in advance, Allow to sit at room temperature for at least 30 minutes and shake well before using.
Salad
Toss mixed greens with enough dressing to coat. Arrange oranges, avocado and red pepper on top of greens. Drizzle with a little additional dressing and top with almonds. Enjoy!
