Ingredients
Citrus Vinaigrette
2tbsplime or orange juice
2tbspwhite balsamic or fruit flavored vinegar
2tsp.honey
1tsp.Dijon mustard
1/4tspsalt
1/4tsp.ground black pepper
1/4c.olive oil or flavored olive oil
Salad
5oz.Mixed Greens
1/2c.shredded carrots
12-16oz.chopped or shredded rotisserie chicken
2c.halved or quartered fresh strawberries
2c.fresh blueberries
2avocados peeledpitted and sliced
1c.thinly sliced mini cucumbers
3/4c.honey roasted almonds
8oz.Burrata cheese cut into 4 piecesfeta or goat cheese are other options
2tbsp.thinly sliced green onionsgreen part only
1/4c.thinly sliced basil
Instructions
Whisk together citrus juice, honey, mustard, salt and pepper. Slowly whisk in olive oil. Optionally, you can put all vinaigrette ingredients in a jar with a tight fitting cover and shake to combine. Set dressing aside.
Toss mixed greens and shredded carrot together with most of vinaigrette, reserving a few tablespoons. Arrange dressed greens on individual serving plates. Top greens with chicken, strawberries, blueberries, avocado, cucumbers, almonds and cheese.
Drizzle remaining dressing over salad toppings. Sprinkle with green onion and sliced basil. Enjoy!
