Ingredients
2prepared pie crusts14-16 oz. package set out at room temperature for 15-20 minutes
1/4c.apple buttersweetened or unsweetened
2tbsp.whole grain mustard
2medium apples sliced 1/8" thickI used Honeycrisp
3oz.deli hamcut into pieces similar in width to the apples (I used Virginia ham)
6tbsp.finely shredded Guyere cheese
2tsp.coarsely chopped fresh thymeplus more for garnish, if desired
1/4tsp.ground pepper
1large egg
1tbsp.water
Instructions
Preheat oven to 400 degrees. Coat a large baking pan with cooking spray.
Place one pie crust on a lightly floured surface. Dust top of crust lightly with flour and roll into a 12-inch circle. Cut two 6-inch rounds from the crust. Gather the dough scraps into a ball and roll out to same thickness. Cut one more 6-inch round. Repeat with the remaining crust, for a total of 6 rounds.
Combine apple butter and mustard in a small bowl. Spread about 1 tablespoon on each crust, leaving a 1-inch border around edges of each circle. Layer rows of apple and ham slices decoratively on top. Sprinkle each with 1 tablespoon Gruyère, some thyme and pepper.
Fold the sides of the dough up over the edge of the filling, pleating/pinching the dough together as you go. Transfer to the prepared pan. Whisk egg and water in a small bowl and brush the edges of the galettes with it. Bake the galettes until the apples are tender and the crusts are a deep golden brown, about 30 minutes. Garnish with more thyme, if desired.
