Shrimp Cucumber Bites
1tablespoonoil
1tablespooncreole seasoning
1poundshrimppeeled and deviened (I used 16-20 shrimp per lb size)
1cucumbersliced
1/4cupremoulade sauceoptional
chopped parsley, optional, for garnish
Avocado Mash
1large avocado (or 2 small)mashed
1green onionthinly sliced or chopped
2tablespoonscilantro and/or parsleychopped
1tablespoonlemon juice
salt and cayenne to taste
Remoulade Sauce
1/4cupmayonnaise
1tablespooncreole mustard
1tablespoonketchup
1teaspoonhorseradish
1small clove garlic, minced
1tablespoonlemon juice
1teaspooncapers, chopped
1green onionchopped
1/4teaspooncayenne pepper
1/4teaspoonpaprika
Instructions
Shrimp Avocado Bites
Toss the shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 2-3 minutes per side.
Top cucumber slices with avocado mash and shrimp then drizzle with remoulade sauce. Sprinkle with chopped parsley if desired.

Mix everything and enjoy!
Remoulade Sauce
Blend everything in a food processor until smooth.
Notes
Option: Use your favorite guacamole instead of the avocado mash.
