Strawberries Romanoff Sundaes

Super simple, orange liquor-spiked strawberry sauce served over ice cream, topped with shaved chocolate. A perfect finale for any meal!

Strawberries Romanoff Sundaes are so simple I hesitate to share the recipe. But 4 years of blogging have taught me that it’s the simple recipes that everyone loves the best. Just three ingredients are required for this delicious sauce; strawberries (sliced and pureed), Triple Sec and sugar. That’s it! Add ice cream and a sprinkle of chocolate shavings, that makes 5 ingredients total!

Casual or Elegant

I’ve served Strawberries Romanoff Sundaes as dessert for a backyard BBQ and and as wrap-up to an elegant meal. No matter what your style of entertaining, every host appreciates a simple dessert that can be prepared hours in advance. You can dress these sundaes up by serving them in glass parfait dishes or fun carnival glass berry bowls like I used. Or keep it casual by using any small bowl that you have on hand.

Chocolate Shaving Tip

I’ve found that softening a chunk of baking chocolate for 10 seconds intervals on low power softens it just enough to shave it more easily. I wrap one end in plastic wrap to keep my hand clean and use a vegetable peeler to make the shavings. You can use semi-sweet chocolate, which is what I used, or milk chocolate if you prefer.

If you want to keep it super simple, sprinkle on mini chocolate chips instead of using shaved chocolate. I avoid large chocolate chips because they can be a tad crunchy when they’re at room temperature. But in a pinch they would work as well.

Other Topping Ideas

The original recipe I used suggested chopped pistachios vs chocolate, and a mint sprig. This combination looks lovely, so by all means give that a try. You can also use other chopped nuts like almonds or pecans. Personally, I love the combination of vanilla ice cream, strawberries and chocolate. But Sundaes are like salads, it’s more about inspiration than having an exact blueprint, right?

Strawberries Romanoff Sundaes

Ingredients

  • 2 cups quartered strawberries
  • 1/4 cup triple sec orange flavored liquor
  • 2-3 tbsp sugar
  • 1 1/4 cup sliced strawberries
  • 6 cups vanilla ice cream or more!
  • 1 ounce square of baking chocolate

Instructions

  • Combine 2 cups quartered strawberries, 1/4 cup triple sec and sugar in a blender and process until smooth. Pour into bowl and stir in 1 1/4 cup sliced strawberries. Cover and chill for one hour or longer.
  • Microwave baking chocolate square for 10 second intervals until it softens slightly (you don't want it to melt!) Wrap one end of chocolate square with plastic wrap and holding wrapped end, shave chocolate with a vegetable peeler.
  • Ladle a small amount of strawberry sauce into serving dishes. Add a scoop of ice cream and top with remaining sauce. Sprinkle with shaved chocolate. Enjoy!

Notes

You can opt for mini chocolate chips instead of the shaved chocolate or used chopped pistachios, pecans or almonds.
