Healthy protein-rich ground turkey is transformed into fun lettuce wraps in just 20 minutes. The delicious Asian sauce requires only a few common staples: ketchup, soy sauce, ground ginger, dry mustard, and garlic powder. Next, we stir in chopped water chestnuts for crunch and shredded carrot and sliced green onion for a pop of color. Now pile this delightful concoction into tender, low-carb lettuce leaves and chow down!
Make-Ahead Option for Asian Turkey Lettuce Wraps
You can make the meat mixture in advance if you want a minimal amount of last-minute fuss. Simply cook the ground turkey, add the water chestnuts and sauce, then pop it in the frig. When you’re ready to enjoy them, rewarm the mixture in the microwave, stir in the carrots and green onions, and assemble the lettuce wraps.
I made the meat mixture a few hours in advance but I believe it would keep fine if made a day ahead. I also recommend having plenty of napkins handy. They are a tad messy but in the most delightful way.

This prompted me to revisit some favorite recipes from the archives as well as finding new creations. I hope you enjoy these additional recipes which are some of my favorites.

Asian Turkey Lettuce Wraps
Ingredients
- ¼ cup low-sodium Soy Sauce
- ¼ cup ketchup
- 2 tablespoons apple cider vinegar
- 2 teaspoons dry mustard
- 1 teaspoon garlic powder
- ½ teaspoon ground ginger
- ½ teaspoon freshly ground pepper
- 1 16-ounce package ground turkey
- 1 5-ounce can sliced water chestnuts, drained and chopped
- 1 cup shredded carrot
- ⅔ cup sliced green onions
- 6 lettuce leaves Butter lettuce is my favorite but iceberg works too. You can also make a larger number of smaller lettuce wraps by dividing the mixture equally between additional lettuce leaves.
Instructions
- In small bowl, combine soy sauce, ketchup, vinegar, mustard, garlic, ginger and pepper; set aside.
- Cook turkey, crumbling it into to small pieces as it cooks. Add soy mixture and water chestnuts to turkey. Stir to combine. Remove from heat.
- Add carrot and green onions. Spoon turkey mixture into lettuce cups.
