Ingredients
¼cuplow-sodium Soy Sauce
¼cupketchup
2tablespoonsapple cider vinegar
2teaspoonsdry mustard
1teaspoongarlic powder
½teaspoonground ginger
½teaspoonfreshly ground pepper
116-ounce package ground turkey
15-ounce can sliced water chestnuts, drained and chopped
1cupshredded carrot
⅔cupsliced green onions
6lettuce leavesButter lettuce is my favorite but iceberg works too. You can also make a larger number of smaller lettuce wraps by dividing the mixture equally between additional lettuce leaves.
Instructions
In small bowl, combine soy sauce, ketchup, vinegar, mustard, garlic, ginger and pepper; set aside.
Cook turkey, crumbling it into to small pieces as it cooks. Add soy mixture and water chestnuts to turkey. Stir to combine. Remove from heat.
Add carrot and green onions. Spoon turkey mixture into lettuce cups.
Notes
Turkey/ water chestnut mixture can be made a few hours in advance and refrigerated. When ready to serve, rewarm in microwave. Then stir in carrot and green onion and assemble lettuce wraps.
