Baking Christmas cookies is as essential to my holiday experience as decorating the house and buying gifts. In fact, as soon as the house is decorated, my oven fires up and the flour flies as the mixer whirls into life. Baking cookies is in my DNA. It all started with my Mom, who would create special holiday treats when we were kids. Since then, I have enjoyed baking with family and friends, creating dozens of cookies and many lasting memories throughout the years.

Great Gift Idea

While baking is part of my holiday heritage, I also enjoy making cookies to give away as gifts. Almost everyone enjoys receiving homemade goodies, and it’s a fairly low-cost gift idea. Just bake a few double batches, package into treat bags, and embellish with ribbon, a small ornament, or whatever you like.

Easy Dessert Option

Making a selection of Christmas cookies also allows me to hit the easy button for dessert when I entertain during the holiday. Fortunately, I have plenty of freezer space, so I get my baking done early in the season. When I have a gathering, I just pull out a selection of cookies and make up a tray. Instant dessert!

Mini Peanut Butter Cup Cookies

Author: Adapted from Better Homes and Gardens November 1994 Mini Peanut Butter Cups recipes provided by Thelma Hoagland.

Ingredients

  • 3/4 c. creamy peanut butter
  • 1/2 c. shortening
  • 1/3 c. white sugar
  • 1/3 c. brown sugar
  • 1 egg
  • 2 tbsp. milk
  • 1 tsp. vanilla
  • 1 1/3 c. flour
  • 1/2 tsp. baking soda
  • 1/4 c. white sugar
  • 20-25 mini peanut butter cups halved
  • 1 16 oz can vanilla frosting
  • red and green food coloring

Instructions

  • Preheat oven to 350 degrees. In a large mixing bowl, beat first 4 ingredients in a mixer on medium speed until combined. Add egg, milk and vanilla; beat well. Combine flour and baking soda; add to egg mixture, beating well.
  • Shape dough into 1″ balls. Roll in the 1/4 c. sugar; place 2″ apart on ungreased cookie sheet. Bake in a 350 degree oven for 10 to 12 minutes or until lightly browned.
  • Remove from oven. Immediately press a half peanut butter cup (cut side down) into each cookie, about 1/2″ from bottom edge (cookies will crack.) Cool for 1 minute; transfer cookies to racks and cool completely.
  • To decorate, tint portions of frosting with red and green food coloring and pipe leaves and berries onto cookies.
