Ingredients
3/4c.creamy peanut butter
1/2c.shortening
1/3c.white sugar
1/3c.brown sugar
1egg
2tbsp.milk
1tsp.vanilla
1 1/3c.flour
1/2tsp.baking soda
1/4c.white sugar
20-25mini peanut butter cupshalved
1 16ozcan vanilla frosting
red and green food coloring
Instructions
Preheat oven to 350 degrees. In a large mixing bowl, beat first 4 ingredients in a mixer on medium speed until combined. Add egg, milk and vanilla; beat well. Combine flour and baking soda; add to egg mixture, beating well.
Shape dough into 1" balls. Roll in the 1/4 c. sugar; place 2" apart on ungreased cookie sheet. Bake in a 350 degree oven for 10 to 12 minutes or until lightly browned.
Remove from oven. Immediately press a half peanut butter cup (cut side down) into each cookie, about 1/2" from bottom edge (cookies will crack.) Cool for 1 minute; transfer cookies to racks and cool completely.
To decorate, tint portions of frosting with red and green food coloring and pipe leaves and berries onto cookies.
