Easy Buffalo Chicken Chili delivers a hearty bowl of goodness in less than an hour!

Perfect for a quick, healthy, weekday meal, this chili riffs on the popular buffalo chicken wing appetizer. Chopped celery and carrots combine with ground turkey or chicken, canned diced tomatoes, beans and seasonings for a one pot meal. Even though it’s short on prep, it’s long on flavor with plenty of kick from the Cayenne Pepper Sauce and the chili seasoning packet.

  • Sour Cream
  • Sliced Green Onions

Blue Cheese Sour Cream

What goes better with buffalo chicken wings than blue cheese dip? With that idea in mind, I created a simple version by stirring crumbled blue cheese into sour cream. A dollop of this Blue Cheese Sour Cream on the chili really embraces the buffalo chicken wing experience. Not a fan of blue cheese? No problem! Just use regular sour cream.

Adjusting the Heat Factor

This chili has quite a bit of flavor, with a medium level of heat. If you prefer a milder chili, start with a tablespoon of Cayenne Pepper Sauce and add more if it suits your taste buds. Or you can skip it all together. If you want to dial the heat up, you can add more Cayenne Pepper Sauce during the cooking process. Or add some to individual bowls just before serving. That way everyone can customize the heat level to their own liking.

Hot Dish to Chili

You probably noticed from the photos that this is a very thick chili. Truth be told, the original recipe yielded what I call hot dish vs chili. While the hubby and I were taste testing, he suggested adding chicken broth to create a more chili like consistency. This worked perfectly! There was also plenty of flavor even after thinning with the additional broth. If you prefer a thinner chili, simply add more than the 1 1/2 cups of broth. I didn’t get around to taking additional photos after adding the broth, but trust me, it looks more like chili once it’s added!

Easy Buffalo Chicken Chili

Quick and easy chili with a kick from buffalo hot sauce, ground chicken or turkey, veggies and beans and your favorite toppings.

Ingredients

  • 1 tablespoon butter
  • 1 pound ground chicken or turkey
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 package McCormick® Chili Seasoning Mix
  • 1 can 15 ounces white beans, rinsed and drained
  • 1 can 14 1/2 ounces petite diced tomatoes, undrained
  • 1/4 cup FRANK’S® RedHot Original Cayenne Pepper Sauce
  • 1 1/2 cups chicken broth

Optional Toppings

  • 1/3 cup sour cream
  • 2 Tbsp Crumbled Blue Cheese
  • Shredded Cheddar Cheese
  • additional crumbled blue cheese
  • 1 avocado cut into chunks
  • sliced green onions

Instructions

  • Melt butter in large skillet on medium-high heat. Add carrots and celery; cook covered for 10 minutes, or until vegetables are fairly tender, stirring occasionally. Add ground chicken or turkey; cook 5 minutes or until cooked through, stirring occasionally.
  • Stir in remaining ingredients. Bring to boil. Reduce heat to low; cover and simmer 20 minutes, stirring occasionally. Serve with desired toppings. For more heat, drizzle with additional RedHot Sauce, if desired.

Optional Toppings

  • For Blue Cheese Sour Cream; stir 2 tbsp. blue cheese into 1/3 c. sour cream. Add a dollop to chili before serving. Top chili with other desired toppings.
