Fruit and Cheese Kabobs with Croissant Croutons

Fruit and Cheese Kabobs with Croissant Croutons are perfect for happy hour or brunch!

Fruit, cheese, and crackers are a tried and true combination for entertaining. Why not thread a colorful assortment of fruit and cheese onto skewers for a playful twist and easy to serve format? Now let’s talk about these croissant croutons. At first, I almost omitted them, but my culinary curiosity took over. Wow! Crispy on the exterior, yet tender and buttery in the middle. Move over crackers, croissant croutons are the new Sheriff in town!

The croutons are also delicious with a tossed green salad.

Options & Tips

  • Cheese – you can use a combination of cheeses or stick with a single selection. The original recipe suggested white cheddar, which would be lovely. I used Dill Havarti and Butterkase, a semi-soft, buttery cheese I recently discovered at Hy-Vee. They have a wonderful cheese guide you can explore if you’re interested. Just be sure to select cheese that can be cut into cubes and isn’t too hard or crumbly to thread onto skewers.
  • Fruit – there are additional options for fruit, such as cantaloupe, peaches, kiwi, or apples. Choose fruit that is easy to cut and thread on skewers. Personally, I love the color combination of the blackberries, green grapes, and strawberries.

Hosting an intimate and socially distanced book club in the middle of a pandemic calls for Covid-friendly ways to serve snacks. By that, I mean food that doesn’t require shared serving utensils or scooping handfuls of munchies out of communal bowls. The answer? Food on a stick! Here are the additional appetizers I served at my gathering.

Tweaks: – I used shredded rotisserie chicken vs canned chicken and a romain/shredded carrot/red cabbage salad mix. I also omitted the crumbled croutons. I recommend using enough dressing to moisten the salad well, which helps you roll it more tightly in the wraps.

Tweaks – The original recipe called for either Serrano Ham or Proscuitto. I opted for Proscuitto. I alternated pieces of apple with the olives to balance out the salt factor.

Fruit and Cheese Kabobs with Croissant Croutons

Fresh fruit, cubes of your favorite cheese, and toasted, buttery croissant croutons on skewers create colorful appetizer kabobs, perfect for happy hour or brunch.

Ingredients

  • 2 large croissants (or 4 small ones), cut into 1" cubes
  • 1 tbsp olive oil
  • kosher or flaky sea salt, to taste
  • 16 blackberries
  • 16 green grapes
  • 16 small strawberries
  • 12 ounces white cheddar or other combination of cheeses see note below
  • 16 bamboo skewers

Instructions

  • Preheat oven to 350 degrees. Toss croissant cubes with olive oil in a bowl then place in a single layer on a baking sheet. Sprinkle lightly with kosher salt. Bake for 14-15 minutes, stirring a few times, until golden brown and crisp. Allow croutons to cool before proceeding. Note – can be made an hour in advance
  • Thread fruit, cheese, and croutons on skewers. Note – it's best to put the blackberry on last because they tend to leave a streak on the skewer. Serve immediately.

Notes

Notes: I used two kinds of cheese – Dill Havarti and Butterkase, a semi-soft buttery cheese. You can use any cheese you prefer that can be cut into cubes and isn’t to too hard or crumbly to be skewered.
