Fresh fruit, cubes of your favorite cheese, and toasted, buttery croissant croutons on skewers create colorful appetizer kabobs, perfect for happy hour or brunch.

Ingredients
2largecroissants (or 4 small ones), cut into 1" cubes
1tbspolive oil
kosher or flaky sea salt, to taste
16blackberries
16green grapes
16small strawberries
12ounceswhite cheddar or other combination of cheesessee note below
16bamboo skewers
Instructions
Preheat oven to 350 degrees. Toss croissant cubes with olive oil in a bowl then place in a single layer on a baking sheet. Sprinkle lightly with kosher salt. Bake for 14-15 minutes, stirring a few times, until golden brown and crisp. Allow croutons to cool before proceeding. Note - can be made an hour in advance
Thread fruit, cheese, and croutons on skewers. Note - it's best to put the blackberry on last because they tend to leave a streak on the skewer. Serve immediately.
Notes
Notes: I used two kinds of cheese - Dill Havarti and Butterkase, a semi-soft buttery cheese. You can use any cheese you prefer that can be cut into cubes and isn't to too hard or crumbly to be skewered.
