Lemon Chicken Burgers & Cauliflower Mash
These flavor-packed chicken burgers are bursting with lemon, fresh herbs and a nice little kick of cayenne. Typically you wouldn’t catch me eating a burger of any kind without at least one condiment. With these burgers, no condiments are required! Better yet, this is a meal you can have on the table in about 30 minutes. Bonus!
Quick-Preserved Lemon Recipe
I am a big fan of preserved lemons, but as I suspected, there was none to be found at my local grocery story. Thankfully, the ever resourceful internet produced this easy recipe for Quick-Preserved Lemon which only takes 15 minutes. I finely minced the peel and then mashed it into a paste. You can skip this ingredient, but I think the effort is well worth the flavor boost.
Cauliflower Mash Short Cut
If you’re anything like me, you’re always looking for recipe short cuts that don’t compromise the way a dish tastes. While I didn’t make the fresh cauliflower version of this side dish, the frozen riced cauliflower version turned out great. I used 2 packages of Birds Eye Savory Herb Riced Cauliflower and then added butter, cream and Parmesan. How could you go wrong? Plus, mashed cauliflower has the benefit of being lower in carbs than mashed potatoes. So indulge without the guilt!

Lemon Chicken Burgers & Cauliflower Mash
Ingredients
Chicken Burgers
- 1 lb ground chicken
- 2 tbsp sour cream
- 1 tsp chopped fresh rosemary
- 1 tsp kosher salt
- 1/2 tsp cayenne
- 1-2 tsp garlic paste depending on your love of garlic
- 1 lemon, zested
- 1 tsp preserved lemon paste, optional see link in post for recipe
- 3 tbsp chopped chives
- 2 tbsp olive oil
Cauliflower Mash
- 2 10 oz. packages Birds Eye Riced Cauliflower Savory Herb
- 2 tbsp butter
- 2 tbsp heavy cream
- 1/2 cup finely grated Parmesan
- pinch nutmeg
- kosher salt, to taste
Instructions
- Chicken Burgers: In a medium bowl, mix together the ground chicken, sour cream, rosemary, kosher salt, cayenne powder, garlic paste, and lemon zest. Mix in preserved lemon paste (see link in post for making quick preserve lemons) and chives.Divide into 4 patties. Heat oil in skillet over medium heat. Sear each patty for 5 – 8 minutes per side.
- Parmesan Cauliflower Mash:Cook packages of riced cauliflower according to package directions.Place cooked cauliflower into a food processor with butter, heavy cream, Parmesan, and nutmeg. Puree until creamy. Serve with chicken burgers.
