Chicken Burgers
1lbground chicken
2tbspsour cream
1tspchopped fresh rosemary
1tspkosher salt
1/2tspcayenne
1-2tspgarlic pastedepending on your love of garlic
1 lemon, zested
1tsppreserved lemon paste, optionalsee link in post for recipe
3tbspchopped chives
2tbsp olive oil
Cauliflower Mash
210 oz. packagesBirds Eye Riced Cauliflower Savory Herb
2tbspbutter
2tbspheavy cream
1/2cupfinely grated Parmesan
pinchnutmeg
kosher salt, to taste
Instructions
Chicken Burgers: In a medium bowl, mix together the ground chicken, sour cream, rosemary, kosher salt, cayenne powder, garlic paste, and lemon zest. Mix in preserved lemon paste (see link in post for making quick preserve lemons) and chives.Divide into 4 patties. Heat oil in skillet over medium heat. Sear each patty for 5 - 8 minutes per side.
Parmesan Cauliflower Mash:Cook packages of riced cauliflower according to package directions.Place cooked cauliflower into a food processor with butter, heavy cream, Parmesan, and nutmeg. Puree until creamy. Serve with chicken burgers.
