Turkey a la King is an easy, old-school comfort dish featuring tender turkey, mushrooms, peas, and red peppers in a creamy white sauce served over rice or noodles.

Ingredients
2c.sliced mushrooms
1stalk celerychopped
1/4c.chopped onion
1/4c.red or green pepper
2tbspbutter
1/4c.flour
1c. chicken broth
1c.milkI use whole, but use what you prefer
2c.cubed cooked turkey breast
1c.frozen peas
1/4tspsalt
2c.cooked riceI use Uncle Ben's Ready Rice which microwaves in 90 seconds

Instructions
In a large nonstick pan, melt butter and saute celery for 3 minutes. Add onion and pepper and saute another 2 minutes. Add mushrooms and saute until all vegetables are tender. Note - I sometimes cover the pan for part of the sauteing step to make sure all vegetables are cooked to a tender stage.
Place flour in small bowl and slowly whisk chicken broth into flour in a steady stream, until smooth. Stir broth into vegetable mixture, then stir in milk as well. Bring to a boil. Cook for 2 minutes or until thickened.
Add the turkey, peas and salt; heat through. Note - I recommend covering the pan for a few minutes with the burner on medium low for this step. Serve with rice and top with chives, if desired.
