2green onion finely sliced or choppedgreen parts only
2tbsp.panko bread crumbsbe sure to get Panko, not just dry bread crumb
1/4tspground black pepper
1/4tspkosher salt
1 1/2tbsp.olive oilor olive oil cooking spray
1limehalved
Sriracha Mayopurchased or a few tsp. of Sriracha (or to taste) stirred into 1/3 c. mayo
4Challah rollsor bun of choice, lettuce & tomato, optional
Instructions
Heat oven to 425 degrees. Spray the baking sheet with cooking spray. Scatter the tots on the sheet and then coat with additional spray. Toss with Cajun seasoning. Bake until golden brown and crisp, turning halfway through, 25-30 minutes.
Meanwhile in a food processor, pulse together the shrimp, egg white, green onion, panko, salt and pepper just to combine (there should still be some chunks of shrimp.)
Heat the oil or additional cooking spray in a large nonstick skillet over medium heat. Shape the shrimp mixture into 4 patties that are 3/4" thick and cook until golden brown and opaque throughout, 3 to 4 minutes per side. Remove from skillet and squeeze lime halves over the burgers.
If desired, spread the buns with Sriracha mayo and then top with burgers, lettuce and tomato. Or serve burgers without buns, topped with sriracha mayo.
